21.01.2022 My Salmon Escalopes (grilled ) with creamy vermouth sauce ( fish stock, double cream, sweet vermouth, lemon juice, butter and flat leaf parsley) , finished off with crispy dill .

18.01.2022 My oven baked Ocean Trout (lime zest, salt, dill and olive oil) with crispy skin crackling (lime zest, smoky salt, dill and olive oil), served with creamy mash and fresh salsa (baby Roman tomatoes, Spanish onion, parsley, lime juice, olive oil, salt + pepper and a little white sugar).
