25.01.2022 Sorry forgot to mention you will need 400 grams of salt and a few Chux or a piece of cheese cloth. Any salt will do except iodised. There was a typo in the last message. It is Rennet not Renner. Rennet sets the milk.



23.01.2022 Our first red cabbage this year. I think I will have a crack at making Sauerkraut. Our broccoli is looking pretty good this year as well.

20.01.2022 Fresh pasta for dinner tonight. We made lots of ravioli filled with fresh ricotta, feta, garlic and spinach. We also made a pork based ravioli for the meat lovers. Very messy but really good fun and delicious.

20.01.2022 We picked our last dragon fruit and made a dragon fruit cake for afternoon tea. I made the recipe up and it turned out fantastic. 4 of us nearly finished it in 1 sitting. Passion fruit icing also made up. I will put the recipe up later on today.



19.01.2022 I am really showing off now. Dinner all from the garden and chook pen. The only thing not from the farm is the salt in the omelet.

16.01.2022 This coming Saturday I am going to do a few short videos on how to make haloumi and whey ricotta. If anyone would like to join in all you need is 2 pots, that fit together as in the picture, a thermometer, a plastic or similar egg lifter, 2 baskets similar to the ones in the picture, and 1 ml of Renner. You will also need 4.5 litres of Mungalli or misty mountains milk or fresh from the cow. If anyone locally wants Rennet, contact me and we will organise pick up from my mail box. If you cant make it this Saturday, the videos will be there anytime to follow. Although i will be available on Saturday for questions. Nice activity when in isolation. We kick off at 9am.

15.01.2022 Our new calf is 2 weeks old now. The mum (Nelly) has the best milk ever. Lots of thick yellow cream. The cheese is turning out really yellow and very delicious



15.01.2022 It looks like we will be picking pumpkins off our plum tree this year.

14.01.2022 Joe is having a crack at making mead with our honey. Next week when we have more ripe dragon fruit he is going to make a dragon fruit batch. It's bubbling away nicely. Jaboticaba (a Brazilian grape tree) will be great to try at the end of the year. If we are isolated for any length of time it might come in handy.

13.01.2022 We picked our first purple cauliflower. 26 centimetres across. It's the first time growing these purple beauties. They seem really suited to this climate. Let's hope it's as good as it looks.

10.01.2022 Haloumi and whey ricotta making on Saturday. Just a reminder about a few things to organise before Saturday. If you are having trouble getting baskets, get 4 take away containers like in the picture, heat up a fork and poke holes in 2 of them. Lots of holes. 2 are for draining and 2 are toppers and don't need holes. Make do with what ever you can find. MILK you will need non homogenized milk. 4.5 litres. There are a few brands that don't homogenized. It will say on the label.... Also you will need 10 ml of cool boiled water if your water has chlorine in it. If you have rain water that's great just out of the tap. Chux or cheese cloth to line the baskets or something similar. 400 gr salt 1 ml Rennet A small syringe or small medicine measuring cup. Something to measure 1 ml and 10 ml. 2 pots that fit inside each other. The larger pot is the water bath. As long as the small pot holds 4 litres. The idea is that the pot with the milk in isn't directly on the heat. I plastic ladle, spoon or what ever you have that is similar. See more
