22.01.2022 Tuesday Treat: Time to try your own Cheese Fondue this week! 10g dried porcini mushrooms (dried mushrooms from gourmet shop) 1 garlic clove 300ml wine (preferably riesling)... Juice of 1/2 lemon 500g gruyere cheese, grated 500g Emmental cheese, grated 2 tbs cornflour 1/3 cup (80ml) kirsch (a white brandy) Cubes of woodfired bread, to serve 1. Soak porcini mushrooms in a bowl with 1/3 cup hot water for 30 minutes. 2. Drain, discard water, then finely chop. Use back of a knife to bruise garlic. Rub inside of a pan with garlic, then discard. 3. Place pan over low heat and add mushrooms, wine and lemon juice. Stir in cheeses and cook for 6-8 minutes or until melted. Mix cornflour with 3 tablespoons cold water, then add to cheese mixture with kirsch. 4. Stir well. Season and transfer to a fondue pot set over a lit flame. Serve bread for dipping.

18.01.2022 This weeks Tuesday Treat is a delight! Three-cheese Pasta is an easy recipe to try when youre in need of a cheese hit! 375g packet fresh lasagne sheets 1/2 bunch fresh thyme 20g butter... 250g tub mascarpone 80g gorgonzola 1/2 cup finely grated parmesan or vegetarian hard cheese 1. Using a sharp knife, cut lasagne sheets into 3cm-wide strips. 2. Cook pasta in a saucepan of boiling, salted water, following packet directions until tender. Drain, reserving 1/4 cup liquid. 3. Meanwhile, remove thyme leaves from sprigs, reserving any flowers (see note). Melt butter in a large non-stick frying pan over medium heat. Add thyme. Cook for 1 minute or until fragrant. Reduce heat to low. Add mascarpone. Cook, stirring, for 2 to 3 minutes or until melted and smooth. Stir in gorgonzola and parmesan. Cook, stirring, for 1 to 2 minutes or until melted. Add pasta and reserved cooking liquid. Toss for 1 to 2 minutes or until heated through. Season with salt and pepper. 4. Divide pasta between plates. Serve, sprinkled with reserved thyme flowers.

10.01.2022 As the name suggests, the history of Pecorino Romano dates back to the Roman times when it was a part of the staple diet of soldiers at war. Today, by law, the cheese is made using only traditional methods in the unique areas of origin. Dry-salted by hand, the wheels get a salting numerous times, to deliver a fabulous taste. Its lengthy aging time from eight to 12 months results in a dry and granular texture and a strong taste. It is one of the most popular, albeit sharper, alternatives to Parmesan cheeses.

It is a traditional Italian stretched-curd cheese that originated in the southern Italian provinces of Abruzzo, Calabria and Campania. The name translates literally as horse cheese, and while its meaning has been debated for centuries, its probably derived from the traditional method of transport; cheeses would be suspended like saddlebags across a horses flank for the journey down the mountain.

06.01.2022 Apple, walnut and stilton tart! Try it tonight or save the recipe for the weekend. 3 apples sliced (pink ladies with the skin on work great) 250 gms walnuts, roughly chopped 125 gms Stilton blue cheese, crumbled... 1 dose of Pte brise Instructions Take tart dough out of the fridge, place it on a sheet of baking paper and roll it into a 1 cm 0.4 inch thick sheet. Cut 4 circles of approximately the same size as your tart tins and put the dough in the greased tins. Press it down well and make sure you have dough at the sides. Prick the dough with a fork. Alternatively, buy ready-made tarts from your local store. Arrange your sliced apples on the tart, crumble the Stilton on them and top with the roughly chopped walnuts. Bake the tarts in a pre-heated oven at 210C for about 25 minutes, or until golden brown. Serve warm or at room temperature with a green salad on the side.
