In contrast to the sweet sticky date, this dish followed on with native fruity flair to provide a unique palette cleanser acknowledging indigenious ingredients. An ode to Australia and New Zealand. We were inspired to connect the cultures in build up to the next round of pop ups in New Zealand after Wild Flora. ... This dish brought the menu into another realm using our favourite molecular gastronomy techniques. We had so much fun nerding out creating actual culinary magic with the feijoa and red kiwi spheres. A raspberry and schizandra semifreddo cooled off the palette atop a macadamia and riberry crumb and raspberry coulis. A 24hr stone ground chocolate with roasted hazelnuts made the most mouthwatering ‘Nutella’ pool on the plate, a chocolate mousse, aerated reishi chocolate paired with a light hazelnut cream, hazelnut cardamom biscuit and a davidson plum gel. 20.01.2022 Elkee's face in this photo honestly! Heart explodes!!!! Meet baby donkey, Pedro - he stole my heart like no other, such a lil sweetheart! I stopped sharing stories of the beautiful animals from the farm we lived on, as we moved house 5 months ago and I've been pretty quiet about it. I have no idea why I haven't shared more to be honest - but I'm here to open up and let you in a little ... We moved to the Byron Region and lived on this beautiful farm for 2 years, landing in a stable amazing private rental where the landlords became our family, there was such a sense of stability and community - we really hit gold! I got sick as soon as we moved here with the weirdest flu for over 2 months, coughing up thick green phlegm, had conjunctivitis and a staph infection in my skin. No one else got sick, just me! I thought I was adjusting to living in a new area/state and just went about life. 2 years later, 1 miscarriage and 10kgs heavier - and sick as fuck. I finally got some answers! MOLD ILLNESS Chronic fatigue Light sensitivity Memory impairment Poor word recall Difficulty concentrating Confusion Red Eyes Blurred Vision Static Shocks Vertigo Chronic Inflammation Weight Gain Depression Mould Illness like Lymes Disease often gets dismissed by health professionals. But I'm here to tell you - I now have real life experience and this shit is real!! Honestly it was crazy! It just didn't seem tangible, there was no visible mould around the house. But I was constantly throwing out tea towels, underwear, swimmers, towels and then our sheets (bloody expensive organic linen ones)! There was tiny black mould through our belongings, we were sleeping and living in it. I worked with @brianagunn_naturopathy for 6 months to get the answers I needed and had tests done on the house - as I thought I might be able to sort it out and stay. Turns out levels were that high I'd never get well if I stayed! There's something really beautiful about being involved in the magic creation on a couples special day. I'm so happy I still get to be apart of wedding days now via my current craft of cakes & sweets! The responsibility and stress yes ...
