25.01.2022 Been Baking this week! ~Persian love cake mini-rose bundts ~ Italian Ricotta Cheesecake with pistachios and blackcurrants ~ Baklava ~Poppy seed cake with carmelized orange peel



25.01.2022 Indian lunch this week with friends! I made Biryani Rice, my chicken curry (Zafron's Shirazi), a Fava bean dish and lentil & vegetable dahl.

24.01.2022 Here is my Luksa in a plated version with rice noodles, chicken, prawns, lots of veges and crispy shallots.

23.01.2022 At the market yesterday we bought dill, continental parsley and coriander, so today I picked garlic chives and mint from our planter garden and made Persian Koo Koo with fresh eggs, barberries, a bit of tumeric and crushed walnuts. Really tasty and nothing better than with fresh cut cucumber, mint, radishes, tomatoes, avocado and some goat's cheese -- all with warm Afghan flatbread. Refreshing lunch indeed.

23.01.2022 Lunch today at home with our friend Scott, the fabulous photographer from "Into the Light" photography. He's doing my product range for Chef Fay's Kitchen gourmet baked goods. More on that soonish here! After the shoot I made a Spanish Paella with spices I bought in Valencia last year!

23.01.2022 Lunch/dinner today was the lamb terrine again (from shanks) wrapped in prosciuto on minted pea puree with roasted potato and fennel. corn-on-the-cob and carmelized beetroot. A really tasty jus too!

22.01.2022 A bit of news! Chef Fay's Kitchen will soon be launching a range of baked products aimed at busy coffee shops and cafes. These will also be made available for HOME DELIVERY once a month to Brisbane and the northern Gold Coast area. Our flagship product is the Persian Love Cake (picturerd) available in a full size cake, mini cake and mini muffins. Aromatic spices and rose water flavours with almond meal and pistachios! There'll also be French Canelé (pictured) poppy seed cakes, crostoli, baklava cakes, cashew shortbread, chocolate and vanilla mini bundt cakes. If you'd like to be on the order/delivery list or would like to convince your local coffee fix to carry these products send us a message or an email. We hope have our first delivery in time for Valentines!

20.01.2022 Had a great cooking class with wonderful family of 3 on Saturday. We did Persian Borani dip for starter, my signature dish from Zafron restaurant Caspian Chicken ( sauce is in the skillet pics--recipe is still kept quiet) and a Persian Baklava Cake. I also made Khoresti Mast a stew using lamb and yoghurt and saffron. Chello rice with tadiq (Crisp potato from the bottom of the rice pot) and good company for lunch!

13.01.2022 My hand made poppy seed Parpadelle. Some friends brought organic eggs and ham for us on the weekend so lunch was pasta with ham, mushrooms and roquette.

08.01.2022 Hello all: Here's a recipe for my Chicken and Leek Pie. I am now working from home and taking bookings for cooking classes of 4-6 persons. THe class is about 2 -3 hours duration including a lunch we make together. Cuisines can be Italian, Persian, Thai, Indian, French etc. Just put together a group of friends and let me know.
