25.01.2022 Recipe: Pain Au Chocolat. Croissant 1000 g of Bread flour 1000 g of All-Purpose flour ...300 g of sugar 100 g Fresh Yeast 60 g salt 900 g of whole milk 300 g of fresh butter 1 kg (1000 gr) butter (82-84%) - extra dry laminated 40x40cm for lamination. Cocoa Détrempe: 300 g Croissant Dough 40 g valrhona cocoa powder 70 g fresh cold water Place all the ingredients into a mixing bowl and mix in first speed for 5 minutes, or until well blended together. Roll in a square shape, to 2 mm , wrap in plastic and place in the cooler. Croissant Dough: Mix everything in a bowl with the hook attachment. Slowly mix ingredients and knead for 10 minutes on 2nd speed. Form the dough into a ball and cover with a plastic wrap, leave to prove for 1 hour at room temperature (22-25C / 72-77F). Push down and roll it up to 60x40 cm then cover with cling film and leave overnight in the refrigerator. Roll out the dough to 7 mm, then place the butter to cover 2/3 of the surface area. (fold the non-buttered third onto the butter, then fold the remaining third on top). Use a simple fold. Leave for 30 minutes in the fridge. Then do a triple fold and rest for 30 minutes in the fridge . Spread the Cocoa Détrempe in the same size of the croissant paton, brush it slightly with cold water, and place it on top of the croissant paton, chase air bubble away, and make sure the cocoa détrempe is well stuck on the paton. Now, with the Cocoa Détrempe always facing up, spread your dough at 3 mm. Cut up into 8x 16cm rectangular . Add the chocolate stick , then shape (roll it up loosely). Place croissant on a baking tray and leave to prove at 27C at 80% humidity for 3 hours. 08.01.2022 This gorgeous Pina Colada Cake is the perfect way to celebrate warmer weather. Gorgeous tangy pineapple flavoured cake which is fluffy, encased my creamy cream ...cheese frosting, and coated in coconut! Pineapple Coconut and Rum Cake Serves 15 Cake 425g - 2 1/2 cups all-purpose flour 2 tsp baking powder 1/2 tsp baking soda 3/4 tsp salt 4 large eggs 170g - 3/4 cup granulated white sugar 100g - 1/2 cup brown sugar, firmly packed 125ml - 1/2 cup coconut oil 60ml - 1/4 cup rum 60ml - 1/4 cup coconut milk 200g - 1 cup crushed pineapple, drained Frosting 250g - 1 cup full-fat cream cheese block (not spreadable), chilled 250g - 1 cup unsalted butter, softened 300g - 2 cups powdered (confectioners’) sugar 150g - 1 1/2 cups powdered milk (skim or full-fat) 2 tsp vanilla extract or vanilla bean paste Rum Simple Syrup 210g - 1 cup granulated sugar 190ml - 3/4 cup water 3 tbsp rum Decorations 2 cups shredded coconut Fresh pineapple wedges Cake Preheat your oven to 150C (300F). Spray and line two 8-inch cake tins with baking paper. Set aside. Add the flour, baking powder, baking soda and salt into a large mixing bowl and use a whisk to stir until well combined. Set aside. Add the eggs and sugars to a large microwave safe bowl. Use an electric hand mixer or stand mixer fitted with a whisk attachment to whip until pale yellow and thick. About 5 minutes. Add the coconut oil, rum and coconut milk and whisk until well combined. Add half the flour to the wet ingredients and mix on low speed until no dry ingredients are showing. Add the remaining dry ingredients and repeat. Add the crushed pineapple, fold into the batter using a spatula. Split the mixture amongst the two cake tins. Bake for 30 minutes or toothpick inserted into the centre of the cake comes out clean. Take out of the oven. Allow to cool at room temp for 10 minutes before taking out of the tin and placing on a cooling rack to cool completely. Frosting Place the cream cheese and butter in the bowl of a stand mixer fitted with the paddle attachment. Alternatively, you can use a hand mixer. Mix on low speed to begin with, to help break up the cream cheese a little, then increase the speed to high for a couple of minutes to help combine the cream cheese and butter. After a couple of minutes, stop your mixer and scrape down the side of the bowl with a spatula. Add the powdered sugar, powdered milk, 2 tsp rum, 2 tsp coconut flavouring or milk and vanilla. Mix on low speed until the dry ingredients are fully incorporated, then bring the speed back up to high. Continue beating on high speed until your frosting is fluffy and turns pale in colour. Add the frosting to a large piping bag. To trim your chilled cakes, use a cake leveller or large serrated knife to carefully trim the crust off the top of each cake. Then trim each cake in half. You’ll end up with 4 layers. To crumb coat your cake, add a dab of frosting onto a 9 cake board or flat serving plate. Use a small offset spatula to spread the frosting around before adding the first cake layer. Gently press down the centre of the cake layer to make sure it’s stuck to the frosting underneath. Add frosting to a piping bag and frost a ring around the top of the cake. Fill the centre with more frosting. Use your small offset spatula to smoothen out the frosting before you add the next layer of cake. Repeat with the remaining layers. Add more frosting around the sides and top of the cake. Use the small spatula to smoothen out the top and sides of the cake, taking care to fill in any gaps in between each layer of cake. Chill for 2 hours or overnight. Add a final layer of frosting by repeating the same process. Once smoothened out, gently add shredded coconut to the sides of the cake. Fit the end of a piping bag with a Wilton 6b piping tip. Pipe swirls of cream cheese frosting on top. Finish by topping with pineapple wedges before serving. Notes It’s important to always mix the cream cheese frosting on high speed. The only time you mix it on low speed is after you’ve added the dry ingredients. Mixing on high speed helps to aerate the frosting, giving it volume and making it easier to pipe. This cake is really moist. But it goes even more moist the next day. Cake can be stored in an airtight container for up to three days.
