24.01.2022 Long time ago.. i was a chef de partie for a good italian restaurant in a little town called clitheroe in England, there was this French chef.. Patrick! One hell of a crazy one. But he knew how to balance out dishes like this, the beef stroganoff! starting from cooking the cream with tarragon and leek to infuse extra flavours.. to then add it to the French mustard, the onion, the mushrrom with the chunks of rump steak that were already frying in the pan...... 22.01.2022 Simple is the key to good Italian dishes, especially with pasta dishes. Simple as a few anchovies melted in good olive oil along with a little garlic and chilli.. getting the flavours infused in that oil.. to then add the salty capers.. the sweet cherry tomatoes and the tasty black olives coating those small ribbon of al dente pasta... 19.01.2022 Well, today its six years for me in australia and here one of the classic italian poor people food! "Puparuol mbuttunat" aka stuffed peppers! I have tried to give it some good flavour profile adding some anchovies, capers, black olives to the minced beef ,egg , garlic and soached bread! I blowtorched the peppers removing all the skin , stuffes and then cooked in the oven for 40 minutes Well you can see the results and i get to eat it! Ahahah... Just gorgeous! 12.01.2022 This is crunch! Crunch is the sound that you can hear miles away when you bite it! So crunchy! Because after left the chicken into buttermilk for hours, I coated it into the "pastella" which is a mix of flour, cornstarch and semolina, then into my own mix of spices and flour before deep frying it! ... I served it with garlic and thyme sweet potato mash, some serious crunchy onion rings, deep fried Bruxelles sprouts @chefsteve330 style with red wine onions that i have cooked them for a while nice and slow to give the dish a touch of sour end acidity to clean the palate from the sweetness of the mash and the "fat deep fried food"! This dish represents 2 of the people who helped me become what I am now, "the peperonata" made like my mother would and the real "polpette" like my nonna iolanda used to do.. both combined in a dish and made them look like a restaurant would do. 08.01.2022 Hello.. my name is Zuppa di Lenticchie! I am a traditional lentil "bready" soup, I am one of the most traditional southern Italy dish, home cooking at its best! The real Italian food that my mother, my grandma and aunties and cousins and so on cook at home on daily basis. Often we have "old bread" and wasting it would be bad, so we dice it and put it in a plate, then in a pot we just fry some onion, add a tomato in, some lentil.. add some water.. and let it simmer for half an... hour.. salt and pepper.. some chilli if you like! Pour it up on your bread... a drizzle of good extra vergin olive oil and some fresh cracked pepper on it. Enjoy the flavours of italy. 08.01.2022 Today i had i made a curry, ravinder is the name of the guy who thought me how to make one of the many type of curry, to cook it nice and slow starting from roasting the spices.. adding the onion, the garlic, the ginger and the tomato.. then the nuts.. blend it and add to it all the rest of the spices like cumin .. i love cumin... drop the chicken in and let it cook nice and slow! While start cooking the basmati rice with burned onion and saffron in coconut milk ... so tast...y! 06.01.2022 This is bella! Bella is a mix of an Italian pasticciotto, a napoletan pasticcioto e a crostata! I had some sponge , custard and limoncello liqueur left over from the desert I did at the begin of the week! I made some sweet pastry and made this thing up! 01.01.2022 This is my take on a beef burger made from scratch, starting from the milk bun! So yeah.. i made my own milk bun, my own pickled carrots, my own bacon and maple syrup relish, fried onion.. and of course my "different" beef patty whick was more like my grandmother sundays polpette! Had garlic, parsley, soacked bread, parmesan, egg, salt and pepper.. And a few fennel seeds! ... It was impossible to bite for how big it was.. and those cemrispy potatoes wedges with paprica, rosemary and garlic.. wend down as a treat!
