10.01.2022 Vegetarian Pumpkin ricotta waffle (yield 4) Ingredients ... 1. puff pastry 270 gm 2. Pumpkin 200gm 3. Olive oil 1tbsp 4. Garlic clove 1pc 5. Fresh oregano 1pinch 6. Ricotta cheese 130gm 7. Parmesan cheese 20gm 8. Salt to taste 9. Pepper to taste 10. Cherry tomatoes 12pcs 11. Mix Salad leaves 12. vinaigrette 13. Pumpkin seeds . Method : 1. Cut pumpkin in small even square cubes. 2. Heat up the pan with olive oil on low medium heat cook pumpkin for 5-6 minuets. 3. Add garlic And oregano to the pan and set aside . 4. In a big mixing bowl, mix ricotta and Parmesan with cooked pumpkin mixture. 5. Season it well with salt and pepper. 6. For puff pastry, cut in 8 even squares. Enough for four waffles. 7. Roll up 1 pc of pastry on the counter add a quarter of mixture spread it evenly but keep about a cm gap from the Edges. Place another piece or rolled pastry on the top and firmly press it on the corners. Press the edge down with a fork to get the nice impression on the edges and also firmly sticks the pastry together. 8. Heat up waffle maker , spray with cooking oil. When it’s hot , place puff pastry waffle in waffle iron and gently press in down . 9. Bake it for 4-5 minutes or until the pastry is crispy brown and cooked evenly. Assemble: in a deep dish plate, at the bottom place some lightly dressed garden salad dressed with vinaigrette. Cut down the waffle in Triangle shape .
