25.01.2022 These two beautiful SG2 knives from Yoshimi Kato are up on the website, 1 of each available. Both SG2 Core, Bunka has Black Stainless Nickel Damascus clad, and stainless hammer clad for the Gyuto. Really excellent pieces overall.

25.01.2022 In our opinion, these are one of the best value series of knives for those wanting something high performance without blowing the budget. The Kanjo knives use HAP40 as a core steel, a favourite among knife experts for its insane edge holding ability and durability, yet it retains ease of sharpening. Put simply, it blows VG10 and even traditional high carbons out of the water. Just $289 for the 240mm Gyuto.

19.01.2022 While we may not see the beautiful Kisuke knives before the end of the year, we still have plenty of the 135mm Petty and 150mm Honesuki. An absolute pleasure to use and some of the finest quality, edge retention, sharpness, and finish we've come across.

18.01.2022 We can't sing the praises of the @blenheimforge Gyuto enough. A seamless blend of rustic and refined. 220mm blade length with a Japanese steel core, etched as to prevent rust and patina, solid copper ferrule and walnut handle, crafted in the UK. A premium addition to anyone's kitchen.

13.01.2022 Can't get enough of the Tsuchime finish on this Yoshimi Kato SG2 Bunka. Too good! One left, with some new Kato knives dropping next week

12.01.2022 Not only are the @blenheimforge knives expertly crafted in London from Japanese Blue Steel, they're also sharp enough to cut your finger so bad it'll put you in the hospital and require surgery Definitely, absolutely not speaking from experience. At all.

10.01.2022 A range we're very excited to get back into stock very shortly, the Yoshikane White 2 Steel line. The kurouchi soft iron clad, hammer finish, and burnt chestnut handles are instantly recognisable as being from Yoshikane Hamono. The SKD Steel knives from Yoshikane are also on order which will be another step up from these again.

07.01.2022 The last of the Kato SG2 have left the building for now, but we've still got a few of the Tsuchime Nashiji range in 240mm Suji, Gyuto and Bunka. King Stones have also sold fast, but we've got hundreds of pieces of Suehiro stones, both combination and singles arriving in a couple of weeks

06.01.2022 Is it time to upgrade your boner? With more than double the carbon content of your off the shelf boning knives, these use Japanese VG10 Steel and are hardened to HRC60, meaning they stay blazing sharp for much longer. Not to mention they look the part Made in Gifu, Japan, hit the website for more details.

04.01.2022 We've just released 2x of the 270mm Sujihiki by Yoshimi Kato on the website. SG2 (probably our favourite knife steel) double bevel with a super crisp satin hammer finish. Rosewood and Pakka handle pairing make for 2 gorgeous slicers. SG2 stands out for us due to having the performance benefits of high-carbon steel knives, with all the added elements of stainless. It's oftened hardened to about HRC63 which makes for a knife that holds a scalpel like edge for a much longer time than other steels without the maintenance. Check them out here: https://www.chefs-edge.com.au//yoshimi-kato-nashiji-sg2-s/

04.01.2022 @orionknifeworks has produced something special here! Three incredible pieces together before 2 head off to their new homes, and the other is drawn this weekend. Can't wait to see what's next

03.01.2022 Shiro Kamo knives will be making an appearance on the website again, hopefully before the end of the year. Anyone that has used a Kamo knows how well these perform and how well they're finished. Excellent attention to the small details, superb craftsmanship and great pricing. White 2 Damascus and Blue 2 Kurouchi

02.01.2022 The masterful @manaka_hamono_tanrenjo makes some of the best knives we offer. Kisuke Petty and Honesuki now on sale for Christmas. The Honesuki is over 4mm thick at the spine, and feels fantastic in the hand. The Petty is a nimble, light, and tack sharp utility knife.

01.01.2022 We got lucky and have 3 of the Kato SG2 Bunka to throw up on the website! Problem is, these are now so hard to find, that we've sold 2 before we could even make a post about it Last one on the website, go snatch it up so we can ship it tomorrow for you.

01.01.2022 You know it's going to be a good day when a new batch of @blenheimforge knives arrive! Fresh restock of the Santoku and Nakiri, what a fine looking set
