24.01.2022 Im getting into the swing of this slowness. Less than 4 weeks ago I was frantically organising three wedding cakes and one birthday cake for one weekend and now . . . nothing . . . 23.01.2022 Happy 30th Birthday to Hannah! Black and rose gold is beautifully sophisticated , a special request for these colours. Dark chocolate mud cake layered with a whole 1kg jar of Nutella () both neat and used to flavour the layers of silky Italian Meringue Buttercream. Some roughly crushed home-toasted hazelnuts provided some awesome crunch between the layers, a textural sensation! (My daughter was mooning over this so I promised to make the same inside cake for her birthday). 21.01.2022 An artistic take on this gentlemans career focus, a retiring cardiologist. The idea for this cake came from an amazing Selleti vase I saw @whimsyflorist called Love In Bloom. Whimsy kindly let me borrow the vase to observe up close to help me to model this cake! Unfortunately I was unable to return it - I fell in love with it and had to buy it! See this amazing vase in my last photo. 21.01.2022 Wow. . . Such romance! So grateful to be included in the launch of the amazing beauty Tassie has to offer to couples @brunyislandau Cloudy Bay Beach House. Wild, untouched, private and intimate, beautifully captured by @weddingsbythewilde. I knew just what this launch needed and was thrilled to again employ the unique and ethereal technique of aged stone by @jasmineraecakes to pair perfectly with on trend dried florals by @thefloral_criteria. This cake blends beautifully with... the exquisite design by @artaudandco and is also so interesting up close. This technique turns out just the way it wants to, the skill is to work with it as it develops on the cake, to echo the colour, tone and movement of the flowers, to draw the eye up and around the cake. Simple, yet highly detailed. Preparing the fondant takes days to get just the right balance of dry and pliable medium. Harriet always challenges me with her cake choices - last year was a Harry Potter Unicorn, this year she wanted the scene from Avengers Endgame where Black Widow sacrifices herself . . . Ummm . . no. 15.01.2022 Yep, flower overload! This time @lisakingstonflowers is to blame! You can totally see why I had to use them though, one of my greatest joys is to turn up to Lisa at Salamanca at 7.45am on Saturdays and leave with armfuls of her gorgeous blooms! Have to turn up early though as she completely sells out! There is absolutely nothing that compares to her show of colour on Saturday morning - and she often has a wedding to do that afternoon - how does she manage?!?! Laura and Nichol...as wanted something really yummy and chocolate-y and gluten-free-y for the bride! And not too wedding-y - hmmm - note sure I nailed that, I got carried away with the gorgeous velvet romance of the colours! The cake was a soft and spongy moist gluten-free chocolate with soft ganache for filling and exterior detailing. This lovely lady was made for the lovely Hayley and Scott who celebrated their wedding at the picturesque Stonefield Brighton which is such a beautiful world away from the everyday to while away an evening and afternoon. She was dressed in picture-perfect blooms from Elise Tollard-Darby - ...thank you Elise! The wedding also featured navy so we decided to use a navy fondant board beneath the cake to really set it off, I love a dark cake base . All time favs lemon zest white choc mud with lemon curd and vanilla IMBC top tier and dark choc mud with thick, rich, raspberry filling and soft whipped ganache in the base tier, semi-naked iced in silky vanilla IMBC - always my go-to for buttercream . 11.01.2022 Meet Adalina and Alvaro! They were super excited to attend Emma and Georges post wedding celebration on Bruny Island at the end of October! I have to say, Alvaro looks a bit Lenny-Kravitz-rock-god to me , what do you think? Alvaro is choc full of my take on Black Forest - choc mud cake, layered with gooey chocolate ganache, real, homemade,thick cherry filling and silky vanilla Italian Meringue Buttercream. Adalina is just as scrumptious with my very popular combination of ...luscious lemon-zest infused white chocolate mud, homemade, tart egg-free lemon curd and the same silky Italian meringue buttercream. Both Llamas are dressed for the occasion in modelling chocolate (faces and ears) and coiffed with random swirls of vanilla IMBC. Fondant tassels and sunnies finished them off. These were HUGE - almost Life size! Initially,Their faces were looking incredibly realistic, a chewing mouth and fantastic llama lower jaw teeth - but they started to look rather Halloween-y and although it was the perfect time of year and I thought Emma and George would get a real kick out of it, I decided to tone them down and give them both hearts for noses - after all - they are wedding cakes! Unfortunately I didnt take a photo before I changed them - kicking myself now as it was a hilarious part of the process! Realistically, it makes a lot more sense to use quality plastic figurines, match fondant colour, be clever with their placement, and enable the child to have them to play with forever afterwards, than to spend hours and $$$$ worth of time making intricate figures out of sugar. 07.01.2022 A velvety beauty for Marni and David x I have now made the wedding cakes for three girls in this family - plus a bridal shower, and quite a few birthday cakes and Share Cakes - I am so grateful to the greater Hyland family for their support of my small business! Again, my most popular flavour lemon white chocolate mud and lemon curd with vanilla Italian meringue buttercream for the base tier and Soft Vanilla Caramel Latte layered with oozy homemade salted espresso caramel sau...ce swirled through silky Italian meringue buttercream for the top tier. Due to having three wedding cakes to deliver on this particular Saturday, I employed my dear Dad @brod53 to carefully deliver Marni and Davids cake - my very first employee! He packed it so carefully in his car and drove like he was transporting the Queen But he wouldnt accept any more than a hug and a kiss as payment . (Looking forward to when we are allowed to hug you again Dad!). The sad thing for me is not being able to see the amazing set up by @chestnutandfleece at the venue! 07.01.2022 I really find it hard to be restrained when presented with tonnes of beautiful flowers for a cake (VERY obvious in my next cake post!) - they just all deserve to be there and all make my cakes look so superb! I blame Frances @floraldesigntasmania for making it so hard for me ! However I think I managed it with this wedding beauty for Peta and Jackson! It may appear simple, but there is so much to consider when building a cake, such as density, temperature, food safety, amo...unt of filling, softness of fillings, how a cake will transport, choosing the best drip design, how to chill a cake for the best drip, what ratio of chocolate to cream will give the best drip, weather forecast, structural considerations, safety of flowers inserted into the cake - for a few! My cakes are deceptive - they can look thrown together in a couple of hours but there is so much more to it, I assure you! Peta and Jackson asked for a succulent lime-zest infused coconut cake with thick, smooth, blueberry filling and coconut IMBC for the top tier and my ever popular lemon-zest infused white chocolate mud with lemon curd and vanilla IMBC in the base. Structure and temperature were essential to ensure all of this lusciousness did not ooze out of the cake due to the weight on top of each layer! The gorgeous venue @seagrasslongpoint with a stunning outlook onto the Derwent was beautifully set up by Judy and her team and Frances and echoed a real gentleness of the couple that all of us felt . 05.01.2022 Velvet colours are my absolute favourite and they pair so well with gold. A small but decadent two tier white ganache cake for May and Matt, with a bit of texture to the base tier for some added interest. Janita @beautifulflowersandgifts knew just what I wanted for this cake even more that I did! Lemon curd/ white chocolate top tier and fudgy dark chocolate mud, dark chocolate ganache and homemade thick raspberry coulis for the base tier. I was so pleased with variety of col...ours the @sweetsticksau #edibleartpaints provided for me to blend the colour at the base. You can water these down with rose spirit as much as you like to create a beautiful watercolour effect - looking forward to playing more with these on white ganache . This reception was at the top of a long, steep, bumpy gravel driveway which gave me a few little panics, but oh the view at the top! Will I use fondant or modelling chocolate? How thick should the cake slices be to get the right size? How much yumminess can I put between the layers before it squished out?
