17.01.2022 Dinner was super easy tonight, everything was cooked on the BBQ, all I had to do was marinate the chicken and make the satay sauce. Thanks grandad for the inspiration, he came over today and said that's what he was having for lunch at the retirement village. I remembered Skinnymixers recipe from ALToA and voila dinner... ... What did you all cook for dinner?



15.01.2022 This afternoon I was looking at our bowl of fruit regretting buying a 1kg bag of small mandarins on special. They are really hard to peel and really weren't that nice. So I decided to make some juice out of them... yuk!! It was just aweful, all I could taste was the skin. Not wanting the juice to go to waste I thought I might as well make a cake with the juice. It turned out much better!! ... With Jonny at soccer and Harriet fast asleep it's time for this mumma to relax with a cuppa tea and Netflix :) Have you had any recent recipe fails lately?? You can find the recipe I used here: http://www.recipecommunity.com.au//whole-orange-cak/106338 I added enough juice to taste, adding a bit of extra flour and made the syrup with the juice instead of water. I also only put in 150g of sugar, using some raw and some coconut sugar.

15.01.2022 The easiest, healthiest ice cream there ever was... fruity dream... Perfect for our first taste of hot weather... 3 simple ingredients, 2 bananas, 6 strawberries and half a can of coconut cream frozen. Simply add to Thermomix bowl, blitz on speed 6 for 30 seconds to a minute, depending on how you like the consistency and how long the fruit has been frozen. I topped the ice cream with strawberry syrup I made a week or so ago :)

13.01.2022 This morning Harriet and I made some playdough for some inside play. I used Louise Foultons recipe from her Cooking for Babies and Toddlers Cookbook. 12.01.2022 We're at mum and dads tonight for dinner and instead of ordering takeaway we made honey chicken, thai basil jasmine rice (skinnymixers) and steamed greens. It's always lovely to get in the kitchen with mum and 4 hands are better than 2 :)

10.01.2022 After seeing Beth from This Mixed Up Life's post on making Gnocci I thought I would give it a try :) I must admit that I made a few rookie mistakes and they don't look particularly attractive but boy were they fluffy, light and delicous!! I made half with the tomato pasta sauce from The Basic Cookbook for Harriet and sauted half in ghee, fresh basil and mushrooms for Jonny and I. ... Some tips on gnocci: - make sure the cooked potatoes have enough time to dry out. I put mine in the fridge. - once rolled make sure they have enough flour on them and that they aren't touching one another (otherwise you end up with one big gnocci ball and have to start all over again) - don't over fill the boiling water with the gnocci, otherwise they stick together :) If you haven't made gnocci before it's pretty easy so why not give it a try??

09.01.2022 Tonight's dinner was Lentil and Chickpea Burgers with Tahini dressing from the Vegetarian Cookbook. I was pretty impressed as part of the recipe included making my own Tahini :) I was suppose to make wedges but totally forgot!! I wonder if my baby brain will get any better when the baby's born?? ... So I quickly whipped up some hommus for Harriet (she ate a whole bowl full) and sauted some mushrooms to bulk up the meal. Yum!!

08.01.2022 Soo you may have noticed that I've been a bit quiet the last few days... our little girl decided to make her entrance into the world on October 27th, introducing Scarlet... I'll be taking a bit of a break from posting to spend time with my family. But I would love to see what you guys are cooking in your kitchens ;)

07.01.2022 Yum yum, I must say that I do not miss the dairy with this dish... Healthy Cabonara from Skinnymixers. I did not feel guilty going back for seconds :)

07.01.2022 I was watching midnight dinners on Netflix today, a Japanese tv show about a chefs restaurant open between midnight and 7am. I didn't get very far into the show before I was hungry and craving a simple japenese inspired soup. At the moment our fridge and freezer are packed full of food so it wasn't hard to put together this tasty little morsel :)... I simply sliced some veggies and added them to the simmering basket. Chopped 2 cloves of garlic and a knob of ginger, 2 seconds, speed 7 (scraped the bowl and repeated for another second). Added the onion, cooked in a tablespoon of coconut oil 5 minutes, 100 degrees, reverse speed soft, MC off. Added 1litre home made chicken stock. Mine was partially frozen so heated for 10 minutes, 100 degrees, reverse speed soft. Added the simmering basket full of veggies, the lid then varoma dish with sliced chicken breast on top. Cooked for 10-15 minutes, Varoma, reverse speed soft. I tipped everything ontop of some udon noodles in a large bowl, stirred and enjoyed :) So simple yet so satisfying!!
