22.01.2022 Grilled Ricotta Black Rice Cherries Ingredients 400g fresh ricotta, cut into wedges 1 teaspoon finely grated lemon rind... cup (60g) walnuts 500g microwave black rice, warmed 250g pre-cooked beetroot, sliced 500g cherries, half pitted and halved 100g baby spinach Baby sorrel leaves, to serve Dressing 2 tablespoon extra-virgin olive oil 1 tablespoon white Italian dressing 1 tablespoon fresh lemon juice 1 teaspoon maple syrup 1 teaspoon gluten-free Dijon mustard Method 1. Position the oven shelf on top rack in the oven. Preheat oven grill on high. Line a baking tray with foil. Place ricotta wedges on prepared tray. 2. To make the dressing, place all the ingredients in a small bowl. Season. Whisk to combine. 3. Spoon 2 teaspoons of dressing over ricotta. Season well. Cook the ricotta under the grill for 4-5 mins or until golden. Carefully transfer to a large serving bowl and sprinkle with the lemon rind. 4. Move oven shelf to the middle of the oven. Spread the walnuts over the tray. Grill for 2 mins or until lightly toasted. 5. Arrange rice, beetroot, halved and whole cherries, and spinach around ricotta. Drizzle over remaining dressing and sprinkle with walnuts and baby sorrel, if using. Season and serve.

16.01.2022 Crispy Pork Belly with Cherry Chutney Ingredients 1.5kg piece pork belly 1 tablespoon olive oil... 1 red onion, finely chopped 2 garlic cloves, crushed 1 garlic bulb, extra, halved crossways 600g fresh cherries, halved, pitted 2 tablespoon brown sugar 1 cinnamon stick 1 whole star anise 2 whole cloves 2 tablespoon balsamic vinegar 2 tablespoon fresh orange juice 2 orange rind strips, 2cm wide x 6cm long 1 orange, sliced Fresh thyme sprigs, to serve Method 1. Place pork on a rimmed baking tray. Use a very sharp knife to score skin crossways, about 5mm apart. Pat skin dry with paper towel. Place in fridge, uncovered, overnight to dry out skin. 2. Meanwhile, heat oil in a saucepan over medium to low heat. Cook onion for about 4 mins or until softened. Add garlic. Cook, stirring, for 30 seconds. Add cherries, sugar, cinnamon, star anise, cloves, vinegar, juice, rind and 250ml (1 cup) water. Bring to a simmer. Reduce heat to low. Cook, stirring occasionally, for about 25 mins or until liquid has reduced and mixture is thick and pulpy. Transfer to a bowl, set aside to cool then cover and place in the fridge until required. 3. Pre-heat oven to 160c/140c fan forced. Line a rimmed baking tray with baking paper. Transfer pork to tray. Add orange slices and extra garlic. Roast for 1 hour. Remove and reserve garlic and slices. Increase temperature to 230c/210c fan forced. Cook pork for further 20 mins or until skin has crackled. Set aside, uncovered, for 10 mins to rest. Serve with cherry chutney.

08.01.2022 Cherry Lemonade Ingredients 12 fresh cherries 100g fresh cherries (extra), pitted, finely chopped 1 tablespoon caster sugar... teaspoon ground cinnamon 1 cup (375ml) lemon juice 1 cup (220g) caster sugar, extra 3 cup (875ml) chilled sparkling water 2 teaspoon natural rosewater essence Lemon slices, to serve Mint Sprigs, to serve Method 1. Place cherries in an ice-cube tray and cover with water. Place in freezer for 2 hours or until frozen. 2. Place extra cherries, sugar, cinnamon and cup (60ml) water in a small saucepan over medium-low heat. Cook, stirring occasionally, for 5 mins or until cherries soften. Set aside to cool slightly. Place in a blender and blend until smooth. 3. While the cherry mixture is cooling, combine the lemon juice and extra sugar in a large saucepan over low heat. Cook, stirring, for 5 mins or until sugar dissolves. Remove from heat. Set aside to cool completely. 4. Combine the cherry mixture, lemon mixture, sparkling water and rosewater in a serving jug. Add lemon slices, mint and cherry ice-cubes. Serve immediately.
