22.01.2022 With the colder weather, our children here at Cherry Bridge Station Ropes Crossing Plaza have been loving Lamb Shepherds Pie! The following is a delicious recipe for you to enjoy at home. #whatscookingtuesdays. INGREDIENTS 1 tablespoon olive oil 1 brown onion, halved, finely chopped... 1 carrot, peeled, finely chopped 2 celery sticks, trimmed, finely chopped 1 tablespoon tomato paste 500g lamb mince Salt & freshly ground black pepper 2 tablespoons plain flour 500ml (2 cups) beef stock 1 tablespoon Worcestershire sauce 1 bay leaf 4 (about 200g each) desiree potatoes, peeled, chopped 40g butter 125ml (1/2 cup) milk METHOD: Step 1 Heat oil in a large saucepan over medium-high heat. Add onion, carrot and celery and cook, stirring, for 5 minutes or until soft. Add lamb mince and cook, stirring to break up any lumps, for 5 minutes or until lamb changes colour. Step 2 Add the flour and cook, stirring, for 2 minutes or until combined. Add stock, bay leaf, Worcestershire sauce and tomato paste. Bring to the boil. Reduce heat to low and cook, stirring occasionally, for 30 minutes or until sauce thickens. Taste and season with salt and pepper. Step 3 Meanwhile: cook potato in a saucepan of salted boiling water for 15 minutes or until tender. Drain well. Return to the pan with the butter. Use a potato masher or fork to mash until smooth. Add milk and use a wooden spoon to stir until combined. Taste and season with salt and pepper. Step 4 Preheat oven to 200C. Spoon lamb mixture into a 2L (8-cup) capacity ovenproof baking dish, or use four individual ovenproof serving dishes. Top with mashed potato and use a fork to spread over lamb mixture. Brush with butter. 17.01.2022 On Wednesday, 18th November we were visited by Jessy Mckinless for our Nulungu Dreaming incursion, referred to us by one of our indigenous families. The children were excited to learn about the Aboriginal culture from Jessy, who played the children the didgeridoo and showed the different tools that are used each day such as a boomerang and bark. Lasagne is a favourite with the children at our service currently, and wed love to share this tasty recipe with you! #whatscookingtuesdays. INGREDIENTS: 2 teaspoons olive oil 1 brown onion, finely chopped... 2 garlic cloves, crushed 600g lean beef mince 2 cups of mixed vegetables 737g bottle tomato pasta sauce 250g packet dried lasagne pasta sheets 2 cups thickened cream 2 cups grated cheddar cheese 1/4 cup grated parmesan cheese WHITE SAUCE INGREDIENTS: 2 tablespoons margarine spread 2 tablespoons plain flour 2 teaspoons cornflour 2 cups lite milk METHOD 1. To make the meat sauce, lightly spray a large saucepan with olive oil, add the onion and garlic and cook over medium heat, stirring often for 5 minutes until soft. Add tomato paste and cook for 2 minutes. 2. Increase heat to high, add the mince and cook, stirring with a wooden spoon to break it up for 5 minutes or until the mince changes colour. Stir in the mixed vegetables. Season with pepper and bring to the boil. 3. Reduce heat to medium-low, cover and cook, stirring occasionally, for 20 minutes. Remove the lid and simmer, uncovered, a further 10-15 minutes until sauce has thickened slightly. Taste and season with more pepper if needed. 4. For the white sauce, melt the margarine spread in a medium saucepan over medium heat. Add the flours and cook, stirring, for 1 minute. Remove the pan from the heat, gradually add the milk, 1/2 cup at a time, whisking constantly until all been added. Return to heat and cook, stirring constantly for about 5 minutes until sauce has thickened. 5. Preheat oven to 200C (180C fan-forced). Lightly grease a 6cm x 18cm x 24cm ovenproof dish with olive oil spray. Spoon about 1/2 cup of the meat sauce over base of greased dish. Cover with a single layer of lasagne sheets, trimming to fit if necessary. Top with half the remaining meat sauce, then drizzle over about 1/3 cup of the white sauce . Top with a layer of lasagne, remaining meat sauce and 1/3 cup of white sauce. Top with a final layer of lasagne then spoon over the remaining white sauce to cover the pasta. 6. Cover with a sheet baking paper then foil. Place onto a tray and bake for 30 minutes. INGREDIENTS: 5 eggs 150g (1 cup) self-raising flour, sifted... 375g zucchini, grated 1 large onion, finely chopped 200g rindless bacon, chopped 1 cup grated cheddar cheese 60ml (1/4 cup) vegetable oil METHOD: 1) Preheat oven to 170C. 2) Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine. 3) Grease and line a 30 x 20cm lamington pan. Carrot Cookie Bites INGREDIENTS:... 2/3 cup shortening 1 cup packed brown sugar 2 large eggs, room temperature 1/2 cup buttermilk 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cloves 2 cups quick-cooking oats 1 cup shredded carrots METHOD: Step 1 In a large bowl, cream shortening and brown sugar until light and fluffy, 5-7 minutes. Beat in the eggs, buttermilk and vanilla. Combine the flour, cinnamon, salt, baking powder, baking soda, nutmeg and cloves; gradually add to creamed mixture. Stir in the oats, carrots STEP 2 Drop dough by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375 until lightly browned, 6-8 minutes. Remove to wire racks to cool. STEP 3 Freeze option: Drop dough by rounded teaspoonfuls onto parchment-lined baking sheets. Freeze until firm. Transfer cookie dough balls to resealable freezer containers; seal tightly and freeze for up to 3 months. To bake, place frozen dough 2 in. apart on ungreased baking sheets. Bake at 375 until lightly browned, 10-15 minutes. Surveys were put out and the responses we received were amazing! Although our votes were very close, this year our superstar Miss Lauren received the most votes and took out the award! 05.01.2022 One of our favourite meals here at Cherry Bridge Station Ropes Crossing Plaza is chicken and cheese pasta bake, and we have a delicious recipe here for you to try at home! #whatscookingtuesdays INGREDIENTS: 400 g dried pasta shapes - (I used rigatoni) 1 tbsp vegetable oil... 3 large chicken breasts - cut into bitesize chunks 1 large onion - peeled and chopped 1 red bell pepper - de-seeded and chopped 1 yellow bell pepper - de-seeded and chopped pinch of salt and pepper 2 cloves garlic - peeled and minced 1 tbsp tomato puree tsp dried oregano tsp dried thyme 800 g tinned chopped tomatoes 120 ml double (heavy) cream 100 g fresh baby spinach 100 g strong cheddar cheese - grated 100 g mozzarella - grated Small bunch parsley - roughly torn METHOD Step 1: Preheat the oven to 190c. Boil a large pan of water and cook the pasta for 1 minute less than recommended on the pack. Drain. Step 2: Whilst the pasta is cooking, heat the oil on a medium heat, in a large frying pan. Add the chicken, and cook until just sealed - about 5 minutes. Add the onion and cook for a further 3-4 minutes until the onion is softened. Add the chopped peppers, salt, pepper, garlic, tomato puree, oregano and thyme. Stir and cook for 2-3 minutes. Step 2: Stir in the tinned tomatoes and cream, bring to a gentle bubble, then add the pasta and spinach. Stir everything together, then transfer to a large baking dish. Step 4: Top with the cheddar and mozzarella, and place in the oven for 20-25 minutes, until the cheese is golden brown.
