24.01.2022 Chess Alfresco Kitchens Crayfish Toasties Total: 20 min Level: Crazy Easy Serves 2 as a main or 4 as a starter Ingredients... 1 fresh crayfish Butter Dijon mustard Half cup grated mature cheddar cheese 2 slices of fresh sourdough bread Directions 1. Heat a large saucepan of water until boiling. 2. Put the crayfish into the pot of boiling water, when the water comes back to the boil, boil for 6 minutes and then turn off the heat. Transfer the crayfish to a bowl of cold water so that the crayfish cools quickly and stops cooking inside its shell. 3. When cooled remove the tail and de-shell, you can then pull the tail meat apart with your fingers so it can be spread evenly over the bread. 4. Grill 2 thick slices of the sour dough bread until golden brown on one side. Remove the bread and spread butter to taste on the untoasted side, now here's the tricky bit, you need to spread enough Dijon mustard over the butter so that you can taste it but not so much that it overpowers the delicate flavour of the crayfish. 5. Now spread the pulled crayfish meat evenly over the bread, top with grated cheddar cheese and place back under the grill until the cheese is melted and brown.
