25.01.2022 The majestic chestnut tree Chestnut Grove is named after this towering old tree, which sits on the edge of the vines and takes pride of place on our wine labels. The first vines were planted around the tree. The tree brings us much joy and also makes harvesting the nearby grapes a challenge! We early pick the Verdelho to make Verjuice from the unfermented grapes, then pick at the usual time to make table wine, and then cover the last few rows of Verdelho with netting, leave it to 16.8 baume, and make it into a liqueur Verdelho, in some years (which is traditionally what Verdelho was used for).... Never heard of verjuice? It was first commercially bottled in Australia by one of our idols Maggie Beer and is a favourite of Ottolenghi. 04.01.2022 SPARKLING PINOT CHARDONNAY Here’s what our winemaker, David Dowden, has to say about our sparkling: The Chestnut Grove sparkling is made using the traditional methode champenoise technique of undergoing secondary fermentation in the bottle to create desired pressure and carbonation. This authentic process then allows for further aging in bottle, with the yeast breaking down to create lees which provides the classic toasty aromatics of Champagne and the... lovely creamy texture to balance the fine mineral acidity. Our sparkling is aged for up to 2 years in bottle before hand riddling, disgorgement and corking. A small liqueur addition is also added to the final product to achieve the perfect balance. The Chestnut Grove sparkling is a refreshing dry Brut style with all the complexity and elegance of classic Champagne. Enjoy simply with good friends and family. 01.01.2022 This is the Chestnut Grove vineyard at its greenest, in mid summer. The vineyard backs onto the Palgarup State Forest, which is full of Jarrah and Marri trees. Now, in peak winter, these thirty year old vines are currently bare and we are getting ready to begin pruning. Pruning in winter promotes fresh growth in spring.
