23.01.2022 What a year! In spite of the mayhem around us due to the corona virus the chestnut harvest went smoothly this year. The nuts have never been better quality and whilst Aust Post did their best to delay deliveries nuts still arrived in excellent condition. 22.01.2022 Provenance Restaurant will be reopen from Friday 25th September, initially for Friday and Saturday only, increasing our days as demand increases. We will be doi...ng two sittings inside the restaurant, 5.30 pm and 8pm, set menu only. For our outside space, for both the courtyard and our grassed area, we will be offering a bento for pre purchase. Order the bento the day before, turn up and pick a table or picnic rug and order some drinks with your bento. If the weather isn't to your liking, take it away. 20.01.2022 Now the chilly weather has arrived it’s time for those winter warmers! One of the great combinations has to be chestnuts and mushrooms, classic autumn fare traditionally foraged from the nearby woods in so many Italian villages. They go together perfectly in soup, risotto or pasta dishes but our favourite is chestnut and mushroom ragu on polenta with mascarpone, made easy by using our peeled vac packed chestnuts! 50ml olive oil 50g butter 1 medium onion, diced 2 cloves garli...c, crushed 1 bay leaf, 3 sprigs thyme 400 g peeled and cooked chestnuts 750g mixed mushrooms 10g dried porcini mushrooms, soaked in hot water, drained and chopped 100ml dry white wine 300ml chicken or vegetable stock 1 cup instant polenta 150g grated parmesan cheese 200g mascarpone Heat oil and butter in large pan, add onions, garlic, bay leaf, thyme, salt and pepper and cook for 5 mins Add mushrooms, chestnuts and wine and simmer gently for 5 minutes. 20.01.2022 Finally we were able to call past @yarravalleypasta and pick up some of their hand made ravioli made using our chestnuts with sweet potato and kale. We followed the instructions carefully and cooked the pasta from frozen for 7 minutes, drained and simply added their lemon and sage butter with a little parmesan cheese of course! It was absolutely sensational and believe me when I say we have tried many chestnut pasta dishes on our trips to Italy and this is definitely up there with the very best. 17.01.2022 After 50mm of rain over the last few days we can safely say the fires that have been burning for the last 3 weeks on Mt Buffalo are no longer posing any threat for the next few weeks.Hopefully by then they will be fully contained and under control. Our trees have come through all okay and the young chestnuts have enjoyed the cool wet weather. 17.01.2022 Delicious recipe by @myfamilyfeed via the @chestnutsaustralia marketing program Such a gorgeous Autumn dish using @chestnutsaustralia. They have kindly offered our family a nice big bag of fresh chestnuts and we have been enjoying them so much! This dish comes together in a similar fashion we would expect of chicken marsala, only instead of adding the alcohol we are adding hearty and wholesome chestnuts!... Normally I would use up to 1 cup of cream for a dish like this, however because of the addition of chestnuts, they actually provide a lot of creaminess to this dish so I was able to reduce the cream content to 1/3 of a cup. I ended up with a delicious creamy sauce with a nutritional boost provided by the chestnuts! . Here is the recipe: Ingredients: 2 chicken breast fillets, sliced into thin pieces. For the chestnut cream sauce: 8 chestnuts boiled and peeled ( ensure you make a cut in them before cooking) 1/3 cup pouring cream 1/1/2 TBL dehydtated poricini mushrooms ( available at most fruit shops and delis) hydrates in 1/3 cup Boiling Water 1 shallot diced 2 cloves of garlic diced 1-2 tsp capers To Serve: Fresh parsley, basil and sage Fresh lemon salt, pepper to taste Method: - Cook chicken on both sides over medium heat. Once one side is done flip them over and cook briefly. Remove immediately until they are all cooked. ( cooking time dependant on the thickness) - Meanwhile combine chestnuts, cream and porcini mushrooms and their water into a blender and process. If it is a little to thick add a touch more boiling water or cream. Season to taste. - Add a knob of butter to your grill pan and melt. Add your shallot and garlic and sauté until golden brown then add your chicken pieces. Pour in chestnut cream, and bring everything to a quick boil. Scatter parsley, basil and fresh lemon juice onto and cook briefly. Serve immediately with a salad and slices of sourdough bread for the perfect meal.
