22.01.2022 Hi guys, one of my other passions apart from chillis is wild foods, yes I am afraid I am out of the closet and admit I am hunter. Up at the farm we get to grow much of our food either being vegetables or meat - although with the meat side of things it can be a bit of a race between us and the wild dogs. The other thing we do is hunt and fish for our protein, which leads me into this rather odd recipe for yabbies. My daughters cousin who is the same age as her around 12 reque...sts this breakfast every time he comes up. Which I must admit I find a bit amusing as nothing could be easier than this recipe for breakfast and this has to one of the cheapest meals ever as apart from the sough dough bread everything else is running around on the farm. Yabbie Omlet Ingredients yabbies Eggs Salt and pepper Sough dough Bread Watercress Olive Oil Method First catch your yabbies these things are basically in every waterway in Australia and there is some for of yabbie to be found around the world ie koura in New Zealand, Crawfish in the US Freshwater crawfish in Europe. We use opera house traps in our on farm dams mainly but check what your local rules and regulations are - also please keep an eye on them as two creatures here in Australia are very fond of yabbies being Platypus and the Australian Water Rat or Rakali which is an odd creature that has the face of a Beaver the body of an otter, web feet and a long rat like tail that is half white. After catching your yabbies boil them until they have turned red shell and devein. Mix omelette mix (we just use straight beaten eggs) add salt and pepper to taste. Cook the omelette in a suitable frying pan adding the yabbies before it sets to heat them through. Serve on a Piece of sough dough bread with a generous garnish of water cress lightly dress with Olive oil and you are done. You can also add a splash of Caribbean Chilli sauce as well to add a bit of excitement to the dish (a bit of shameless self promotion) See more
22.01.2022 Hi Guys - another recipe it was my wife's birthday the other day and she has a fondness for Chilli Mussels - so here is the recipe for the dish Ingrediants 1 Kilo bag of live Australian mussels 3 400 gram tins of tomatoes... 3 to 4 fresh tomatoes deseeded and roughly diced either 4 to 5 fresh long red chillies (roughly chopped)with add or Chinchilli Habanero/Cayenne Sauce or any other Chinchilli sauce if you like it hotter or milder. Garlic - 6 to 7 cloves 2 diced onions Knob of ginger 2 bunches of supermarket size basil Extra virgin olive oil 1 half sized banquette Soy Sauce Salt and pepper Method The sauce The trick here is make more sauce than you need as you freeze the left over sauce for seafood Mariana the next week. So in a reasonable size saucepan sweat down the onions, and garlic then add the tinned tomatoes along with the chilli bring to the boil then simmer for at least an hour. Then add at least half your basil (save the rest for garnish)which you have torn or sliced to the sauce along with a dash of soy to taste along with salt and pepper to taste - simmer for another 30 minutes. Whilst you are doing the sauce place the live mussels in a pot steamer and steam until they all open discarding any that look suspect - having once poisoned myself with a bad mussel many years ago a quick check never hurts. There is another little trick here in that we are steaming the mussels open so all the mussel liquid is not retained just the opened shellfish it makes the dish not so musselly. As the mussels cook add the fresh diced tomatoes into the sauce you just want to heat them through. Into a suitable bowl pour the mussels then add the sauce garnish with the rest of the basil serve with roughly torn baguette. Serve with a Riesling or Pinot Grigio The photo looks shocking - probably due to using sping onions for garnish and drinking too much wine!!! See more
22.01.2022 Hi Guys Whether it is mothers day, birthdays or just a bit of romance out in the bush, this breakfast is a bit of a winner and pretty simple. The ingrediants you will need are the following to make one. 1 Slice of large whole meal bread - or any bread you like really 2 Egg to poach... 3 Chilli jam - what a coincidence we actually make chilli jam! 4 Extra Virgin Olive oil 5 Gravlax/smoked salmon - be pretty generous on this as it is sort of the star of the show if you can get the best that suits your budget 6 Spinach leaves - just the ones in the bag will do. Method Toast bread - we generally cut the crusts off to make it look flash Poach egg - I generally cheat and use one of those silicon egg poacher things that you drop into the pot Assemble The Dish Place toast on plate a small layer of spinach leaves onto the toast then a smidge of chilli jam followed by the smoked salmon then place poached egg onto the salmon - bit more spinach leaves and a little bit of salmon on top then drizzle olive oil to taste and salt and pepper and bang she is done and ready to serve. 20.01.2022 Hi guys I have been a bit remiss in my postings on Facebook, but I going to try and improve that this year in an attempt to avoide being nagged by wife and daughter. So I thought I would start with a recipe - A breakfast recipe Fried Rice with Smoked Trout. I have been a bit remiss in my postings on Facebook, but I going to try and improve that this year in an attempt to avoid being nagged by wife and daughter. The first post is a Breakfast recipe that I cook on the farm and ...when I am out and about in far flung places Fried Rice with Smoked Trout Recently I was down in New England near Ebor - which sort of sounds like Draculas brother, but I was down there chasing trout. It is an amazing spot and I cannot recommend Two Sticks Cabins (twostyx.com.au - a shameless plug) which are basically in the middle of no where but absolutely fantastic. For the recipe you will need the following ingrediants 5 spice powder (never leave home without it) Salt Pepper Finally diced carrots, potatoes, peas, (if you have no life you can do this the old fashion way by chopping them all up or you can just buy a frozen bag of them from any supermarket) Jasmine Rice (or a blend of 50% Basmati and 50%Brown rice) Add a tad more oil to wok and add Garlic and Onion quick fry then add rice/vegetable mix and fry until recooked through also add salt and pepper to taste d to the New England Highlands catch one smoked trout 3 eggs Spring onions chopped for garnish Diced garlic Roughly chopped Red onion Soy sauce Touch of Chinchilli Haberno Cayenne chilli sauce (Note shameless plug but it is our favourite all rounder sauce at the moment) Peanut oil Method First off this is generally made by using the previous evenings rice, as this is generally a left overs type meal, but cook rice as you would normally do either in a Rice Cooker or Pot when the rice is cooked and is warm add a handful of the diced vegetables too heat through. In a wok heat some peanut oil and simultaneously (bit of multi tasking here) Crack the eggs whip them up a bit and add 5 spice powder - not too much. Quickly pour the egg mix into the wok and cook a fine Chinese style omelet. Remove omelette from heat and put aside . Add a tad more oil to wok and add Garlic and Onion quik fry then add rice/vegetable mix and fry until recooked through also add salt and pepper to taste Add back into mix the now sliced egg omelette and shredded smoked trout fillet - slip into Chinese style bowls and garnish with chopped spring onions add soy and chilli sauce to taste eat with choppies Give it a go if you can Regards Glen See more

09.01.2022 hello - many people enquire on what our products can be used for. here is a couple of recipes that we use around here for Harissa and for Chilli Pumpkin Jam CHINCHILLI HARISSA LAMB WITH CHICKPEAS 3 tablespoons Chinchilli Harissa sauce Zest of 1 lemon ... 1 tbsp extra virgin olive oil 1 spanish onion cut into wedges 12 garlic cloves smashed Lamb shanks or chops Tins tomato and passata sauce Parsley and or coriander Method Fry onion, garlic and harissa sauce gently in olive oil then add your meat browning all sides. Add lemon zest, tomatoes and passata sauce to nearly cover the meat and simmer on very low heat for at least an hour turning the meat frequently. Soak chickpeas overnight as per instructions on pack and add to the dish 20 minutes before ready to serve garnish with lots of parsley and/or coriander and serve with mash/rice or polenta. BUFFALO CHICKEN WINGS WITH CHINCHILLI PUMPKIN CHILLI JAM 2 x tablespoons Chinchilli dry harissa paste 1 tablespoon plain flour 1 kilo Chicken wings Chinchilli Pumpkin Chilli Jam Method Combine dry harissa paste with flour in a plastic bag and thoroughly coat your chicken wings Place on baking paper and put in pre heated fan forced oven 180 degrees for 20 minutes (or until brown) each side turning only once. Serve with Chinchilli Pumpkin Chilli Jam
09.01.2022 Hi Its been awhile since I have made a comment - but I promise not be so slack in the future. Apart from our ever-growing Chilli empire I would like to introduce you to our 5 new employees on the farm. Tracy, Trevor, Trixie, Tilly and Tessey all Dexter cattle who handle our grass reduction area of the business and beef supply. These ladies and one gentleman are to replace our previous Grass Reduction Team of 3 Alpacas and 12 Damara Sheep who unfortunately were eaten by wild dogs.
08.01.2022 Hi Guys I have been a bit slack lately on Facebook as I have been busy on the farm and dealing with Cattle Rustlers. As poor old Trevor our Dexter bull got himself hijacked about a month ago by person or persons unknown - or he learnt to open then shut the gate round up the rest of cattle and put them in the chilli area and learn to drive. However 3 weeks after his hijacking he turned up again -according to the police it appears he may have been stolen to order by someone who thought he was an Angus and then discovered he was a Dexter which are basically worthless and difficult to put through an abattoir. Luckily though Trevor is mad for the ladies and made his way back from wherever and preceded to break in!!!. Trevor is the Tan one
