21.01.2022 Destination Chocolat; At the heart of each is truffle is an infused ganache. The journey of this craft actually takes days, from infusing to enrobing. But I fell in love with the alchemy of infusion, my way overlaps with 'distilling'. I am never quite sure when the elements come into play together, what I will get at the end; Destination unknown, spontaneous. But the moment of unmatched intensity, complexity and completeness on the palate arrives with certainty. That melty texture and that flavour that lingers for years.
