25.01.2022 Corals on corals, just off the coast. Water was a little bit murky but you'll get the picture. Beautiful coral around these islands right now.



22.01.2022 I've seen so many pictures posted of big quantities of shit (sorry, no other word for it but shit) quality fish in the last week or 2 in the calm weather so I thought I'd put a few up of what fish should look like. Bit of care and respect goes a long way. It's still strongly ingrained that if you catch/caught a shitload of fish you're a legend. I don't agree with it but I understand why people post those sorts of photos. Its a hero thing

22.01.2022 Heres an easy recipe that's worth a go. From Harry Foster this one. Obviously this is trout, but any smaller fish would be suitable- small cod, hussar, stripey, grassy, moses, whatever. 1. Scale and gut the fish, then butterfly and debone. Link here where Harry gives a demo on butterflying and deboning one of our trout. https://10play.com.au//harrys-masterclass-h/tpv200423teuza... 2. Marinate the flesh side with Kaeng Kua curry paste. Never seen the brand before myself, but I'd imagine you could use just about any curry paste. 3. In a small pot, fry off half cup of the same curry paste. Add a tin of coconut milk (fresh coconut milk would be even better), a bit of tamarind paste, bit of palm sugar and a bit of fish sauce/oyster sauce Add those last 3 in whatever amounts depending on how you like the taste. Keep simmering to whatever thickness you like. 4. Oven at about 220-230, bake the fish for 20-25minutes, or until slightly undercooked. Remove from the oven and rest it for 5minutes. It will keep cooking, that's why it has to be slightly undercooked when you take it out of the oven. It's very easy to overcook fish. This was about 1kg so bigger fish for longer, smaller fish shorter time. 5. Tip the sauce over the fish and then top with garnish. This was fried spring onion, finely chopped kaffir lime leaves and lemon grass. Wombok salad goes with it well, but you could have any salad or veges I guess. Bloody tastey, easy to do, no waste. 21.01.2022 Nice golden 16kg mahi mahi into the dry ager. Took a lot of effort to get the colour to hold in this fish. Something I've been working on for a while now. Still not perfect but not bad for a mahi mahi that was caught 2 days prior. Check the last pic. Before I scaled it I couldn't see any marks on this fish. While scaling I noticed a few old scars. I'm guessing the round ones are from cookie cutter sharks.



21.01.2022 This one was taken yesterday. It's about 30 nautical miles to the north of the last drone video I posted. Again, only a minute from an hour or 2 worth of footage but it was all similar. Overall, as healthy as I've ever seen this reef. I've been told more than once that I shouldn't be saying things like that or posting videos like this on social media. I should be telling everyone the reef is in bad shape, talking up the imminent doom and gloom etc. This will help the reef they say.... I say bullshit. Doom and gloom and exaggerated claims help the reef in no way at all. It might put $$$ in pockets, but it certainly doesn't help the reef. I'll show and tell what I see with my own eyes, and I believe what I see with my own eyes. Facts is what the reef needs, not fiction.

21.01.2022 First couple of runs with the ROV (underwater drone)

20.01.2022 Got this tripletail a couple nights ago. Drifting around with a clump of seaweed in amongst a garfish school. It had a gutful of garfish, and took a bait straight up. I see these from time to time drifting around the ocean with debris, but rarely catch them. Saw a big plastic drum floating out near the shelf last winter. As we went to lift it in the boat a tripletail around 10kg came shooting out. Always have a look at floating debris, never know what you'll find. And if it's plastic, take it home. I've also picked up quite a few lures from tide lines lately. Halco laser pro's seem to be a dime a dozen out there!!



16.01.2022 Exactly 1 year ago we won the trophy in the delicious.aus produce awards with red emperor. Today the gold medal winners were announced for 2020 and we've got one for garfish! Proud to see these 5spot gar recognised as some of the best produce in Australia. Trophy winners will be announced in October. Thanks to all of our customers for the support. 13.01.2022 Here's some pics from the last few weeks and a bit of an update seeing as though I keep getting asked how things are going. Gar season is pretty much finished now, and we're almost out of 5 spot so if anyone wants any for bait before they're gone you'll have to be quick. Any more I do catch this season will go to restaurants. Some restaurants have been waiting months for our Garfish. Unreliable flights made it hard earlier in the season. The reef fishing side has been going ...well. Demand is higher than I've seen through winter. Winter is typically a time of lower demand for seafood so it's good to see strong demand at this time of year. Processing fish, well we have decided to stay away from that. I know a lot of people want fillets or fish processed for them but there's just too much involved. I can't do everything. The extra government fees and rules and regulations involved in processing fish doesn't help either..... Its not as straightforward as you would think....... The dry ageing, I'm still playing around with. Different species, different sized fish, different times, different temps/humidity etc. Once I'm happy I've worked it all out we'll start selling some of that. We've had our fair share of struggles in the last few months, no doubt about that. But we kept doing what we've always done and we're getting through. That's because we get a lot of support, so thanks to everyone that's supported us. See more

12.01.2022 The never lie...... No white 'burnt' patches, not a scale missing, no bruises. Every fish handled with care and respect. As they should be. Caught yesterday, packed this morning, these are now on there way to restaurants and resorts throughout

12.01.2022 A lot of people ask my thoughts on how fast these garfish grow, and how old they are, how fast they breed etc. I've always thought they grow very fast. At the start of the season there's an abundance of smaller fish. Within a couple of months, the average size has increased quite a lot. The screenshots are from research done in Egypt, but specifically done on 'Hemiramphus far', which is the black-barred or 5spot garfish. Yes, this species is caught pretty much worldwide, cl...ose to the equator. They are also one of very few fish that have managed to migrate to new areas through the Suez canal!! The mesh they used to catch these fish was far smaller than the mesh size I use, which would explain the smaller sized fish, and lack of larger gar. Contrary to popular belief, you won't catch anything and everything in just any net. A certain mesh size will only catch certain size fish. And that goes for any fish- barra, garfish, mullet, whatever. Anyway, if you look at these graphs, you'll understand why I use larger mesh, and why I catch or sell very few small garfish. Firstly, at 20cm or less, they may not get a chance to breed. Sexual maturity is reached at around 22cm and just over 1yr of age. Like any fish, take them before they get a chance to spawn at least once and you're headed for disaster. Secondly, catching smaller fish is a bloody lot of work. Catching 20cm garfish weighing only 40gms means a bloody lot of fish to get any amount of kg when you pull them from the net 1 at a time! Also a lot of work packing 1 by 1! The average size we catch when targeting for bait is around 25-30cm, which going by this research is about 3yrs old, so most of them have spawned at least once. For food orders, I use a larger mesh again and the average size is 30-35cm. Myself, I suspect they possibly grow faster and to a larger size here, but as far as I'm aware, very little research has been done on this species in Australia. As long as we don't start seeing fishermen using small mesh and catching all the juveniles, I think the QLD stocks of 5spot will remain in good shape. 11.01.2022 Every Aussie should support stronger Country of Origin labelling laws. We all have a right to know where our food comes from, wherever we buy it. I've heard a few people over the years say something like "it said coral trout/red emperor/barra on the menu, so it had to be Aussie". wrong..... those 3 are regularly imported, along with a lot of other species. A lot of the time its imported from countries with poor environmental standards and low food safety standards. Not all imports are bad, but regardless, it should all be labelled. Have a watch and listen to Lennox's story. This whole series on netflix is worth a watch. And if you ever get a chance to go to Firedoor in Sydney, do it. I haven't been there myself but I've done a few things with Lennox now. He's an absolute genius with fire. I can only imagine what Firedoor would be like

05.01.2022 Bit beyond me this video editing but I had a quick play this morning. All footage from yesterday only. Taken on a few different reefs. Strangely enough, every day I see quite the opposite of what we all read or hear in the media......... Endless healthy coral, an abundance of sharks, and plentiful fish life. Go figure.....

05.01.2022 Not oily calm today but calm enough to have a look around with the drone. I took about an hours worth of footage but it was all very similar to this short clip here.
