16.01.2022 Chicken & Barley Minestrone Soup 1 chicken 1 onion diced 2 carrots diced 2 celery sliced... 4 garlic chopped 2 slices bacon/speck/pancetta 1 can cannellini or kidney beans 1/2 bunch spinach or kale chopped 2 zucchini diced 2 Potatoes or swede/turnip 1 cup pearl barley pinch chilli flakes 4 tbls tomato paste 2 bay leaves/thyme To Finish Parmesan cheese, parsley or basil Sourdough toast Method. Put all in pot except zucchini and potato. Cover with water or stock, Bring to boil and simmer for 1hr 15Mins. Add potato and zucchini for last 20 mins. Remove chicken, allow to cool and shred meat. Put back in to soup and serve with grated Parmesan, parsley and sourdough toast.
