20.01.2022 Voting has closed! Campaigning has been amazing and I thank all of you for taking the time to listen to me and hear what I have to say. We only have to wait for the results now! No matter what the outcome is, I will continue to support Moonee Valley because I believe in supporting my community. I’m so excited to see what the future holds.

20.01.2022 I know lockdown has been hard for some of us, please try this cookie recipe to brigten your day! Claire’s Choc Chip Cookies I’ve been trying for a while to get the perfect soft, chewy, choc chip cookies. I think I’ve finally found a recipe to get that subway quality feel.... Ingredients: - 170 g butter - 1 cup brown sugar - cup caster sugar (can be replaced with white sugar) - 1 whole egg - An egg yolk - 2 cups plain flour - teaspoon bicarb soda (also called baking soda) - A pinch of salt - A splash of vanilla extract - Chocolate chips The important part is the method. Method: 1. preheat the oven to 170 degrees celsius 2. Fully melt the butter in a cup or small bowel and then leave it to cool for a few minutes, this is what makes the cookies chewy 3. In a large mixing bowl, add the caster sugar and brown sugar. I like to mix them together with a fork before adding the butter to help separate clumps of brown sugar, I flatten the clumps with a fork to get them to separate 4. Pour the butter into the bowl and whisk, if you don’t want to dirty a whisk a fork should work fine 5. Add the egg and egg yolk, don’t worry too much about getting a little extra egg white in there, whisk again until the mixture is solid golden brown and has a rich creamy texture 6. Add the salt, vanilla extract and bicarb 7. Sift in the flour, it’s important to sift 8. Using a fork mix the batter together until there is no flour left 9. Add in some chocolate chips and mix through, the number of chocolate chips is completely up to you, I usually add around a cup 10. Line two large trays with baking paper and fork out scoops or cookie dough around two tablespoons in size. Mould them into towers at least twice as high as wide, they will spread a lot when you put them into the oven 11. Cook them for about 12 minutes or until the edges are brown, leave them on the tray for 10 minutes and then transfer them onto a wire cooling rack for another 10 minutes Enjoy! Some substitutes I’ve used for or in addition to choc chips include, peanut butter, m&ms, hundreds and thousands, half a broken up block of chocolate Some substitutes I’ve tried that haven’t worked include mayonnaise, I love mayonnaise but have come to the conclusion it doesn’t work well with cookies
