25.01.2022 Our pigs have all been drenched every 4 months and now placed on some freshly grown rye grass to put on some lean, healthy weight all this insuring a higher quality finished product, as well as a healthier happier pig. 22.01.2022 We have had the most AMAZING Jerusalem Artichokes delivered from Claydon Park in Milton (their kale and rainbow chard is also to die for.!) But it led us to th...e thought: with produce this gorgeous - what is the penultimate cooking methods for them??? We investigated we bring you the results (and the recipes) because despite their ignominious nickname (farti-chokes lol) they are a delicious and healthy option to try instead of potatoes or another starchy food The Jerusalem artichoke, also called sunroot, sunchoke, or earth apple, is a species of sunflower native to central North America. They are definitely the unsung heroes of the root vegetable family. They tend to easily take the flavour of other oils and seasonings. They have a delightful crunch that’s similar to a radish. They work well roasted or fried and can be interchanged in any recipe that calls for parsnip, potato or carrots Try them: Roasted with garlic, saffron and chicken thigh cutlets; In a gratin with smoked fish, bay leaves, double cream and breadcrumbs On their own, crispy roasted with garlic & lemons In a warm salad with leeks, creme fraiche, gouda & hazelnuts In a slow cook with pork and its favourite tipple: cider See? so many ways - all delicious Want to try them in a non-threatening environment?
