17.01.2022 COLOMBIA - El Roble This coffee is grown by Jairo Ivan Lopez at Finca El Roble. This coffee was carefully hand picked in order to use only the rispest cherries, it was later transported to La Pradera washing station to be and natural processed by Cofinet. This microlot is 100% Java. This varietal was originated in Ethiopia, it is a natural mutation of Typica, the seeds were taken to indonesia where it was named Java. In 1991 it was introduced to Costa Rica and in 2010... it made its way into Colombia. Tasting Notes: Floral aroma with notes of peach, mango and jasmine with a bold orange acidity. Thanks to the elevation and varied microclimates of this mountainous region, coffee from Huehuetenango is well known worldwide for its bright and crisp acidity. Huehuetenango lies in the Los Cuchumatanes mountain range, the highest point of which is known as La Torre, which reaches almost 3,800 meters. Floral and citruis aroma. 13.01.2022 ETHIOPIA - Yirgacheffe Kochere Bonde Gr1 Natural Grown in the famed Yirgacheffe region of southern Ethiopia, this coffee is a local heirloom variety cultivated by producers at the altitude of 1870 - 1900 msal. Producers from the Kochere bonde kebele (ward), farm an average of 2 hectares. 300-450 producers contributed to this particular washing station. Natural (unwashed) coffee is initially sorted by hand to separate the less dense cherries. Then the best cherry is taken... to raise bed to dry under the sun light. This can take up to 21 days to reach the optimum moisture level. This particular lot was dried for 18 days. When the coffee is dried with cherry still on its seed, it is milled to remove the husks and stored in the warehouse in parchment until its ready to be transported to the final processing warehouse. Cooked peach and dark chocolate upfront. Full body carries tropical fruit acidity. Long molasses finish. . Available as FILTER COFFEE in-store and online

It is also a procedural routine to ensure each roast is consistently bringing the best it can be to the cup. Cupping follows a specific step by step method, like a ritual, and in this sense each team can create their own cupping ritual to bond all members, from roastery to cafe.... 05.01.2022 We have our Fathers Day Blend on the bar today!! This years Fathers Day blend is for all the dads who appreciate a good gin, whisky or craft beer. We have utilised a rum-barrel-aged Colombian and a Pink Bourbon natural processed Colombian on top of a base of natural Mexican to produce an exceptionally rich and aromatic coffee with complex flavours. It has a sweet, boozy aroma with subtle cedar undertones, a rich, syrupy body and a creamy, oak mouthfeel with notes of m...ilk chocolate, hard-boiled raspberry lollies, and pink marmalade. Our Fathers Day blend is terrific as either espresso or filter, though we would suggest that a filter extraction will really bring out the best subtle characteristics that it has to offer. We wish fathers everywhere a wonderful Fathers Day!
