24.01.2022 More than a steak shop Not gonna lie, the warmer months are the trickier ones for us as people move away from winter comfort foods and want to do most of their cooking on the bbq in as little time as possible. We are dedicated to buying our meat only as whole animals from trusted and responsible farmers, but selling cuts like chuck, blade, shin and round becomes significantly harder as the mercury rises. Its an uphill battle, but we want to shed the image of the butcher... shop only being the place to go when youre after a nice steak, with the supermarket copping the rest of the meat bill. We want our customers to care about the ethics of the meat, and respect it as a whole, whether youre buying a steak, some mince, sausages or even just a treat for the dog. Given that traditional steak cuts make up only a rough 25% of an entire cow, think about what you can cook in the warmer months that isn't steak. It'll help us continue to support responsible agriculture and also save you a few bucks while you're at it. Some of our favourites are fatty, juicy brisket burgers, chargrilled beef skewers with chimichurri, or spicy shredded beef fajitas See more

24.01.2022 Fresh delivery of bone broth from our brothers in arms at @amosadamsgeneralstore Locally made broth using by-products of our butchery. Bone broth is a super versatile staple for any home cook. It'll add a little depth to your next gravy, ramen, soup, stew or sauce. Also makes a nutrient dense alternative to your morning tea or coffee. Available in the refrigerated section

23.01.2022 Another big week coming up in the shop. We've got beef and lamb from @myallsprings (Gunnedah) Lamb from @lynden_lamb (Oberon) Pork from @melandapark (Ebenezer) Goat from @thegourmetgoatlady (Collie) Chooks and veal from @camdenvalleyfarm and a bunch of other treats kicking round too. What's cooking this week??

22.01.2022 A big belated Merry Christmas from the C&C family to your own. This year has been wild, so it was only fitting that Christmas week was barely organised mayhem at the shop. First shoutout goes to my wife and business partner, Jess, and our immediate family. Somewhere in the past 5 days they have managed to move us into a new apartment whilst wrangling an 18 month old. Where there's a will there's a way. Secondly a nice big firm handshake and a pat on the back to our Cleaver a...nd Co. Christmas crew -Hayden, Brayden, Josh, Jack and Rob. After a sanity-warping week of Christmas orders and overtime it's hard to believe that we made it. But we made it lads. Thirdly, big hugs and cheers to my brother Braden for saving Christmas on Wednesday night. While I was busy panic attacking and planning my abandonment of the shop and town, little bro dug in to pull us out of the poo. And lastly but certainly not least goes a big heartfelt thank you to all our customers (old and new) for your support through this year and Christmas period. Christmas lunch is maybe the most anticipated meal of the year, so the entrustment of providing your meat is something we feel a strong sense of responsibility and duty for. Here's hoping it was all delicious and nothing got missed We will be taking a couple of days break before returning on December 29. We will be working until December 31 with an aim to clean out our cool rooms completely before we shut down operations from January 1st- 18th. At this stage Australia are 3/40 in the cricket, but hope you are all enjoying your Boxing Day nonetheless

22.01.2022 Not only is tomorrow the last day of 2020, it will be our last day trading until we return on the 18th of January. We have been running meat stocks right down and supplies tomorrow will be very limited. Once again we would like to thank our loyal customers for their support through this year and we look forward to seeing you all in 2021. Happy New Year. The Cleaver and Co Crew

21.01.2022 Last goat for the year from @thegourmetgoatlady All cuts still available. Get your orders in or live goatless til February

18.01.2022 Some cracking lamb and beef from Tammy and Paul Kurtz respectively in the shop this week. Here's some shots from our trip to their family property 'Lynden' in Oberon a couple of weeks back. Beautiful country, beautiful produce and beautiful people. We left with full hearts

15.01.2022 We've spent a few weeks off over the festive season licking our wounds after a hectic Christmas and New Year's, but we will be back at it next Monday face masks and all Can't wait to see you

15.01.2022 Christmas orders are well and truly underway with the first of our pasture raised hams already walking out the door. Support small, independent, regenerative farms by purchasing a Cleaver & Co. ham this year. Place your order in store or by calling (02)42294562 We source our pork through Pillar Rock Free Range, @gregorydownsorganics , @melandapark and @charliearnott1 ... See more

13.01.2022 When we started Cleaver & Co. in 2016 we had no idea just how hard it would be to supply farm direct meats consistently to the public. Between droughts, normal seasonalities, logistics, geographical issues, and pushback from the big boys there was and is a lot of hoops to jump through and boxes to tick. Despite this, we are committed to the vision, and were stoked this morning on our first delivery of lamb from Richard Page @stoneridge71 After some hard years of drought and... destocking we are pleased to welcome Richard and family to our list of stockists as Christmas approaches. This week we also have the last of our lamb from @lynden_lamb for the year, as well as the last of our beef and pork from @gregorydownsorganics Later in the week we will have beef available from Stephen Lambert's property Biin Birri, as well as pork from @melandapark Very little goat from @thegourmetgoatlady and veal from @camdenvalleyfarm is also available, but be quick Christmas orders are still open until Saturday but time is of the essence. We have already begun to run out of certain items so pop in store or call (02)42294562 to place an order

09.01.2022 Buzz words. They come and they go. Today's newest catch phrase is tomorrow's overused, bastardised rhetoric. Free range, grass fed, pasture raised, organic, biodynamic, regenerative. They all mean something but are not always correctly used. We want to pull back the curtain on the meat you eat and say this is the meat, and this is who farmed it. Don't just take our word for it. Check it out.... We've spent some time on our break visiting some of our great suppliers throughout the state. We can't wait to show you what they've been up to

06.01.2022 Rip rip woodchip. Just a few blokes having a crack. 2020 has been a doozy to say the least, and these blokes will go down in history as the crew that got us through. We are in for a helluva week as Christmas rolls around. Seeya on the other side

02.01.2022 Good old Uncle Amos is slinging our beef snitty rolls again today from 12 until sold out @amosadamsgeneralstore
