24.01.2022 We were very impressed with the quality that was made this year. It’s obviously been a good year for a lot of people. James Mele, @themeatroom Judges were ...blown away with the quality of salami that were entered this year. Choosing a winner was no easy feat and came with a lot of toing and froing and going back for second, third and fourth helpings just to be sure. 16.01.2022 DISPLAY STOCK CLEARANCE Sadly our run of expos has been brought to a premature halt, as a a result weve got a stack of items to clear that were going to be u...sed for displays at these events. Please see the individual photos for all available products and the significantly discounted price. None of the items have ever been used and all warranties will still be valid, some of the boxes are a bit beat up and some items have suffered minor scrapes and scuffs in transit but the items themselves are unused. We only have 1 of each item so its first in, best dressed. If you are interested in grabbing something please call us on (03)57983489 or send us a PM. If possible we will consider freighting items but given they are setup we would prefer if they were collected from our retail store in Wangaratta. Inspections are welcome prior to purchasing.

04.01.2022 Large format Chili truffle salami out of the @cleaver_salumi_cabinets done! Bit of case hardening but this went in before I adjusted my settings to lower temp a...t 10c and 75/80%RH. Hopefully it changes the next batch. I lost the ends of this to the same look of the ones I had to chuck a few weeks ago. Which is leading me to believe it was something in the mixing not so much the curing process. Oh well you live and you learn. This is still delicious See more
