11.01.2022 Today is a pot-on-the-fire sort of day. It’s cold, we’re all inside. Have you got any shanks in the freezer that need using? I’ve just added 2-4 lamb shanks (I had 2 little shanks I added as well), 1 onion, 6-8 smashed cloves garlic, herbs from the garden- 2 bay leaves, thyme, sage, oregano, rosemary, 2 tbs cider vinegar, 1/2 tsp whole black pepper, small tbs whole coriander & cumin, salt. Add water to cover meat (photo before I finished adding water). We’ve got ours on the f...ire and I’ll take it off after lunch, mid afternoon. Aiming for low heat. Keep an eye on it, and don’t let boil. Then I’ll the remove bones, drain stock off & set aside, and add vegetables to the pot from the garden, think carrots, beans, zucchini, buckwheat groats or pearl barley. Shred meat from bones and add back to soup. Taste and add in extra seasoning as required. #huonvalley #pandemiccooking #homefire

08.01.2022 We are lost with on the banks of our river with James Rebanks so much so that we purchased a his copy so we can read it together with her Huonville Library copy. ... I would have to work out how to make money from our land without wrecking it. I had inherited a complex bundle of economic and ecological challenges - and that, perhaps, was what it really meant to be a farmer.. Yep.... The farm was a lonely place- a poorer thing when it wasn’t shared. What a funny year it’s been- we’re missing our backpackers and the family we share with them. Looking forward to utopia (and the last section of his book).

06.01.2022 We've been munching on Gravenstein Apples... a 17th century Apple thought to have originated from Grafenstein Castle in Holstein, Germany. These guys are crisp, fresh (picked this morning!) and delicious. Great for both cooking and eating. You'll find them at the Willie Smith's Apple Shed Artisan and Produce Market in the Huon Producers' Network stall.

02.01.2022 While we've been squirrelling away, doing what we do - we have had the privilege to lease a field to Andrew & Naomi of the Huon Grain Shed. With extensive experience growing grain in South Australia, they have been nurturing wheat, spelt and oats at latitude 43 degrees south. A few weeks ago (before the fires), we made the freshest, most delicious, nuttiest loaf of spelt bread using FRESH Huon grain!
