17.01.2022 It's still chilly outside and we have sweet potatoes left over from last nights dinner so this morning's brekky is... SWEET POTATO WAFFLES 6 servings // YOU’LL NEED // 1 Sweet Potato (large, peeled, chopped)... 2 Eggs 80g Maple Syrup (plus more for topping, optional) 5ml Vanilla Extract 230g Almond Flour 10g Baking Powder 1tsp Cinnamon Coconut Oil to coat the pan/waffle maker 70g Almond Butter (to serve) 50g Strawberries (stem removed, sliced to serve) 30g Pumpkin Seeds (divided, to serve) // METHOD // Boil the sweet potatoes until they are fork-tender, roughly 10 minutes. Drain and set aside. In a food processor/blender/Thermomix, add the cooked sweet potato, eggs, maple syrup and vanilla extract. Process until blended. Add the almond flour, baking powder and cinnamon and process until fully combined. Coat the waffle maker some of the coconut oil and add enough batter to cover the bottom of your maker. Cook for 5 minutes or until golden brown. Repeat the process until all the batter is cooked. To serve, top with almond butter, strawberries, pumpkin seeds and maple syrup, if using. Enjoy! See more

14.01.2022 A BERRY GOOD FACE MASK Flicking through my pile of research studies that are filling up my desk and I came across a study discussing that the humble strawberry contains ellagic acid and vitamin C (which may be of no surprise), and I got to thinking about the practicality of their extreme potential to protect the skin from environmental damage, both from ingestion and external application. So my mini lab assistant and I decided to get creative and create a face mask that ...trumps anything in the supermarket and is good enough to eat! The strawberries obviously pack a punch with their antioxidant status, the full-fat yoghurt contains lactic acid which removes dead skin cells and unclogs the skin’s pores, and the lemon juice can lighten any dark spots. Which combined make a perfectly delicious rejuvenating, skin brightening, facial mask. Here’s our recipe: OUR BERRY GOOD FACE MASK Makes one generous sized mask. We doubled the amount which was enough for both of us (even after a few sneaky spoonful's disappeared). * 3 large strawberries (the riper, the better!), * 1 tbs of full-fat yoghurt, & * a small squirt of lemon juice. We used a mortar and pestle to mash the strawberries and yoghurt together and then stirred in the lemon juice before application. You could use a blender if you wish also. Apply to your face and leave for up to 20 minutes and then wash off. * DO NOT use on your skin if you have an allergy, intolerance or sensitivity to any of the listed ingredients. See more

10.01.2022 Here's my go-to recipe for classic nourishing and delicious breakfasts (or super quick dinners) when you want to feed an army with as little ingredients as possible or if you’d like to flex your creativity and earn brownie points on a special day like tomorrow and perhaps include a side of bacon to make your Dad/hubby smile. Our Father’s (or SuperMum's) Day one pan Spanish-Inspired Brekky Shakshuka //INGREDIENTS// 600 g of baby potatoes,... 2 tbso of EVOO (extra virgin olive oil), 180g red capsicum (sliced lentgthways), 8 eggs, 2 tbsp milk, 230g pitted olives or capers (or omit if not liked), 1/4 cup of flat leaf parsley (fresh is best but whatever is handy). //INSTRUCTIONS// 1. Place potatoes in a large, deep frying pan over high heat. Cover with cold water. Bring to the boil. Boil for 15 minutes or until tender. Drain. Refresh under cold water. Cut potatoes into 2.5cm pieces. 2. Wipe pan clean. Heat oil in pan over high heat. Add potatoes. Cook, turning, for 5 minutes or until light golden. Add capsicum. Cook, stirring for 4 to 5 minutes or until capsicum is tender and potatoes are charred. Whisk half the eggs with the milk in a jug. Make 4 indents in potato mixture for whole eggs. Add egg mixture to pan, being careful not to fill the indents. Crack whole eggs into indents. Cover pan with lid. Cook for 4 to 5 minutes or until eggs are just set and cooked to your liking. 3. Meanwhile, combine olives and parsley in a bowl. Season with pepper. Spoon a little olive mixture over shakshuka. Sprinkle with extra parsley leaves and drizzle with a little extra oil. Serve with the remaining olive mixture. This is a hugely nourishing recipe, full of essential dietary fats, lean protein choline, vitamin A & C, iron, vitamin B12, zinc & magnesium, potassium and low in carbohydrates. Serve with a slice of sourdough bread if desired. Enjoy! x

07.01.2022 http:// 5 FOODS FOR A HEALTHY IMMUNE SYSTEM // 1. BERRIES They're a rich source of proanthocyanidins, a potent antioxidants. Elderberry inhibits viral binding to cells and reduce the severity and duration of viral infection such as influenza. Best eaten fully ripe, raw, or made into jams and as an addition to pies! Blackberries, raspberries, blueberries and blackcurrants also contain cyanidins. A great start to a cool morning is some organic oats with a mix of these berries on to...p! 2. GARLIC You either love it or hate it! Garlic is one of the most ancient herbs that has been used since the beginning of documented history, for both medicinal and culinary purposes. It has a huge variety of beneficial effects on the immune system, it induces white blood cell activity, stimulates the release of important cytokines and stimulates the proliferation of lymphocytes and the activity of natural killer cells. It has also been shown to act against viral infections including rhinovirus and parainfluenza virus. 3. BRIGHTLY COLOURED VEGETABLES Rich in antioxidant nutrients, lycopene, betacarotene and vitamin C, the red, yellow and orange coloured vegetables are a great support to immune function. Red capsicum contains almost 3 times more vitamin C than oranges and can be used in a wide variety of dishes! Other great nutrient rich vegetables include pumpkin, sweet potato, squash, beetroot, radishes, red onion, chillies and carrots. Vitamin C increases the number of circulating immunoglobulins, which are antibodies that attach to the pathogen to help the immune system identify and destroy it. Supplementation increases the activity of neutrophils, which act to identify and destroy both bacterial and viral pathogens and increase their vitamin C concentrations. 4. MUSHROOMS Button mushrooms are an Aussie favourite in cooking however more exotic mushroom varieties such as Reishi, Shiitake, Enoki, Maitake and Oyster are just a few of the readily available mushrooms that you can add to your diet. These medicinal mushrooms contain long chain polysaccharides called beta-glucans which have been found to be potent immune enhancers. Beta-glucans stimulate white blood cells of the immune system involved in breaking down bacteria and have an anti-inflammatory effect. Mushrooms can easily be added to stir fries, winter soups, pies, pasta and omelettes. 5. GREEN TEA My fave! Green Tea contains catechins and theanine which have been found to reduce the incidence of influenza infections. Green Tea catechins may affect enzymes found within the virus responsible for its binding and replication capability. When selecting Green Tea look for organically produced teas, you may even like to try Japanese Matcha Tea.
