Here is a recipe for easy Italian coconut macaroons: 2 eggs 100g icing sugar 100g ground almonds 100g desiccated coconut ... 2 tbsp shredded coconut Few drops almond extract 100g dark chocolate, melted Preheat oven to 150c or 130c for Fan ovens. Line 2 baking trays with baking paper. Use an electric mixer, whisk egg whites until stiff peaks form. Lightly fold in icing sugar. Gently stir in the ground almonds, almond extra & desiccated coconut until it forms a sticky dough. Spoon heaped tablespoons of the mixture onto the baking trays and shape into round mounds. Sprinkle with shredded coconut. Bake for 25 minutes, the outer crust should be light golden but the inside needs to be nice and soft. Leave to cool, then transfer to wire rack to cool completely.
