13.01.2022 More fun on the Summit Charcoal. 1. Rack of lamb with garlic, lemon and rosemary. Slow smoked to an internal temp of 125f on the Summit and then reverse seared on the Genesis 2. Smoked potatoes with mint and pea purée. Smoked at 225f for 1.5hours using cherry wood. Peas put in the same dish for the final 10mins and then roughly half of the cooked peas in a food processor with mint, lemon and a dash of olive oil.

Roasted Beetroot with preserved lemon, tahini and Greek yogurt dressing. 2 hours at 275f 3. Smoked potato salad with scallions, green olives and pickle. 1.5 hours at 320f 4. Roasted asparagus with toasted almonds, capers and dill 20min at 350f
