20.01.2022 Roasted Jap Pumpkin with Spiced Yoghurt Dressing 1/2 jap pumpkin 1/2 tsp Cumin powder 1/2 tsp Coriander powder ... 1/2 tsp Curry powder Salt and pepper Cut pumpkin into wedges. Remove seeds but leave skin on. Toss in spice mix and place on baking tray. Drizzle with olive oil and bake at 200 degrees till cooked through. About 20-30 minutes. You may need to drop temperature if it is starting to brown too much. Spiced Yoghurt Dressing 3/4 cup natural or Greek yoghurt 1 tomato finely diced 1/4 cucumber finely diced Toasted cumin seeds 1/2 tsp and dried chili flakes to taste. Toast the spices in a dry fry pan till fragrant. Splash of red wine vinegar 1/8 bunch coriander chopped Salt and pepper Mix together . Baby spinach, spring onion, toasted sesame seeds and chopped toasted almonds to serve. On a large platter lay out some baby spinach leaves, spring onion tops finely sliced then arrange the pumpkin wedges. Drizzle over the yoghurt sauce, picked coriander, chopped almonds and seeds Serve while the pumpkin is still warm.

16.01.2022 With the hot weather it’s looking like salad time! Carrot and pickled red onion salad 1 large red onion finely sliced ... 3 carrots peeled and grated 1/4 cup sultanas 1 cup of shredded spinach leaves 1 1/2 cups of cooked cous cous or quinoa 1/4 cup Toasted sunflower seeds 1/4 cup toasted pepita seeds 1/8 bunch chopped dill Salt and pepper Complete this step the day before Pickle Brine 1 cup water 1 cup sugar 1 cup apple cider vinegar Pinch salt Bring to the boil to dissolve sugar then allow to cook for about 15 minutes. Pour 1/2 the mix over the onions. Pour the other 1/2 the mix over the carrot and sultanas. Pop in fridge. To make the salad drain off the brine. Mix all ingredients together season with salt and pepper and a splash of olive oil. If it needs a little more zing add a splash of the brine.

13.01.2022 Panko and sesame crumbed cauliflower with smoked paprika aioli Cut cauliflower into florets. Steam or blanch till just cooked but they need to be still slightly firm. Place in fridge to cool. Set up 3 bowls for crumbing.... 1. 3/4 cup Plain flour 2. 3 eggs and 1/4 cup milk 4. 2 cups of panko bread crumbs with 1/4 cup sesame seeds and 1 tsp of paprika, Salt & pepper. Crumbed cooled cauliflower and place on baking paper on tray. Drizzle with olive oil. Cook in hot oven at 200 to 220 degrees for about 20 mins till golden and crisp. If you like you can deep fry these. Dipping sauce: 3/4 cup good quality whole egg mayonnaise 1/2 tsp smoked paprika 1/4 tsp finely grated garlic Squeeze of lemon or lime Salt and pepper Mix together.

10.01.2022 Quick pickled golden beetroot. This is just a quick pickle recipe that I use on a lot of different raw veggies that I then use in a number of different salads. Peel and thinly slice beetroot. ... In a pot mix together 1 cup water 1 cup sugar 1 cup of vinegar. You can use apple cider vinegar, rice vinegar, any type really. Just keep in mind the dark variety will alter the colour. Large Pinch of salt You can add aromatics at this stage like fennel seeds, garlic, coriander seeds or chili. Bring to the boil and allow to cook slightly then pour over the beetroot. This is best left overnight but a couple of hours would also work. I have just laid out the beetroot topped it with some spinach and orange segments. Some thinly sliced Japanese turnips or radish would also add a nice touch. Season with salt flakes and a drizzle of olive oil. Golden beets are on the roadside stall this weekend.

Raw Beetroot Salad 1 large beetroot... 1 carrot peeled Small amount of thinly sliced red onion 1 stick celery thinly sliced 1/3 pkt mixed lettuce leaves (these are available to be ordered in our produce boxes) Picked herbs, parsley, mint, dill. Dressing: 1/2 tsp Dijon mustard 1/2 tsp seeded mustard 1tlb honey or maple syrup 3tlb white wine vinegar Salt and pepper Toasted seeds to serve -optional Pick herbs and place in serving bowl with lettuce and celery. In a separate bowl place onion, peeled and grated beetroot and carrot. I use a Asian style grater so I get long thin strips. Add dressing to beetroot and carrot. Mix and season. Just before serving place the beetroot mix on top of the greens and gently mix. You can add toasted seeds at the stage or even some feta cheese.

08.01.2022 This weekend we have fresh garlic for sale on the stall. Just harvested today. They are not large heads of garlic but the definitely have a bit of kick. We were hoping for larger heads but unfortunately this year they were a little on the small side. While stocks last!

04.01.2022 Friday night dinner! Burgers with red cabbage slaw, capsicum relish and bbq onions. 4 brioche burger rolls... 4 beef patties 1/4 cup pickles Cheese 2 onions finely sliced and cooked on the bbq or caramalised in a fry pan. Slaw Mix all together 1/4 red cabbage finely shredded 1/2 stick celery finely sliced 1/2 tsp Dijion mustard 1/3 cup whole egg mayonnaise 1 tsp chopped dill Salt and pepper to taste Capsicum relish or bbq sauce. You can use store bought or I have also attached a recipe for some relish. Dutch cream potato wedges. Scrub 4 large potatoes under running water. Leave skin on and cut into wedges. Toss in a bowl with garlic salt and a little olive oil. Bake in oven at 160 degrees for about 45-60 minutes till cooked. Pick up your fresh produce from the stall! Relish recipe: Red Capsicum Relish Makes 3 medium size jars 30mls olive oil 1.5kg of red onions 8 large red capsicums 10 gloves garlic finely chopped 1 small knob of ginger finely chopped 1/2 tsp black mustard seeds 1/2 tsp cumin seeds 1 1/2 tsp smoked paprika 10 sprigs of thyme picked 1/4 cup red wine 3/4 cup brown sugar 1 cup red wine vinegar Splash of Tabasco depending on how hot you like it. Salt and pepper to taste Method. Have 3 medium size jars sterilized ready to go. 1. Finely slice red onions pop in pot with garlic, ginger and thyme cook till soften. 2. Add the spices and cook for a few minutes. 3. Add the capsicum and cook till all has become soft about 30 -40 minutes. 4. Now add the wine, vinegar, Tabasco, and cook for another 20 minutes. 5. Add the sugar and S+P to taste. Cook till it starts to become glossy and caramelized ensuring you stir it as once the sugar is added it is likely to catch on the bottom of the pot. You want to reduce some of the liquid till it gets to a relish consistency. 6. Finally I blitz it just slightly with a stick blender a couple of times but not too much as you still want to see the capsicum and onion. 7. Bring back to boil and then place into jars while hot, place lid on jar and turn upside down. 8. Store at room temperature until opened then refrigerate.
