25.01.2022 You know how I LOVE supporting local businesses and farmers?... well my biggest mistake when ordering these packets of dried Kensington mangoes is......THAT I ...DIDNT ORDER MORE!!! Haha! These are so amazingly delicious that hubby and I have nearly eaten a whole packet while uploading them to our system! (Don’t fret, Dan lives not far from me and I can order frequently ) As soon as you open the bag, that waft of deliciously sweet summertime goodness hits you in the face and the taste!!! You guys! The taste is so addictive I’m a little worried about our waistline (too late ) DAN THE MANGO MAN is quite well known here at the Sunny Coast. He has only recently started drying the mangoes so that we can enjoy all year round, which is truly genius Apart from the quality and flavour, I just love that these are gluten free, no artificial colours or flavours, no added sugar, and BEST OF ALL.... no sulphur!!!! My sister is highly allergic to sulphur and has to steer clear of things like dried fruit, grapes, wine, even certain shampoo! 17.01.2022 Want a quick, easy, one pan recipe that contains edamame fettuccine and the immune boosting ingredient- turmeric!?! Here you go: Chop an onion, 2cloves garlic, half a jalapeño or chilli (optional) and sauté in a pan with evoo. Once softened slightly, add a zucchini cut into half moons, cook about 5-7 mins until caramelised. Add s&p and a tsp turmeric. Turn heat down to medium and add 2cups water and 1/2 cup coconut milk. Bring to a simmer and add edamame fettuccine (break i...t to fit in pan if needed) stir to make sure pasta is covered with sauce and cook 5 mins stirring occasionally- no lid. After 5mins, add a lid and cook 2-3mins bringing to boil. Check pasta- it should be al dente. Serve with crushed almonds and dried chilli flakes. (I needed about 8 basil leaves and 8 rocket leaves ) She bought two bags of rocket and two packets of basil Well I’m not wasting it! Made two jars of pesto (had no pine nuts but I had cashews and sunflower seeds) with fermented garlic, evoo, basil, rocket, parmesan and s&p) Then made us some roasted miso pumpkin & red onion rocket salad with our delicious pumpkin seed...s from Coeliac Heaven! 10.01.2022 Who is excited that it's Friday?!? I have to tell you, it's been a crazy week for me. I've had our middle son home all week to do a cleanout (encopresis), a visit from my parents who were down for a specialist appointment in Brisvegas for my dear Dad, lots of work and uploading of new products and hampers (which brings me joy), and a really really bad day (couple of days if I'm really honest) on Thursday where nothing seemed to go right. My best friend had to move to Per...th this week. Because of stupid Covid. It was all too difficult for her hubby to FIFO and have to quarantine (at their expense) everytime he returned to Perth, so they had to move there. To say I've been grieving the loss of my bestie is an understatement. Oh I know, there's face time and phone calls, and they intend to come back to the Sunny Coast a few times a year.....but it's not the same as seeing her everyday at school pickup, and our hubbys having beers on the weekend, and our 3 kids who consider their 3 kids as best friends also. (Her daughter is such a good friend to our son with Enco and she always looks out for him and tells the teacher if he's not feeling well but too shy to say anything) But she and the kids will now get to see Daddy every single night, which they've never had in their lives, so that brings comfort. Do you have that one friend who "gets you" even when words are not needed? I hope so! It's awesome. I actually have a few that I'm blessed with like that. Location doesn't take that away. 02.01.2022 It’s official! I’m 40! Here’s some pics of my little shindig last night. Lots of GF goodies in there, including Well & Good lemon & coconut cake, Yes You Can red velvet cupcakes, Melindas brownies....just to name a few. Ooh and my husband cooked us delicious Fog Dog tempura veggies which were amazing! Was a great night Absolutely exhausted now. ALL of this was made by my husband and I. (I married a good one )

02.01.2022 Choc Fudge Brownie OR Raspberry Coconut Cake Balls * 2 cups prepared Melinda’s GF Chocolate Fudge Brownie Mix crumbs for chocolate balls OR * 2 cups prepared Melinda’s GF Raspberry Coconut Cupcake Mix crumbs * 1/2 cup buttercream icing (or Berry Crocker Frosting)... * 1 cup desiccated coconut for rolling RATIO: 2 cups cake crumbs to 1/2 cup buttercream icing 1. Process pre-baked brownie or raspberry coconut cupcakes in a blender to create small crumbs. 2. In a bowl, combine the cake crumbs and buttercream icing together to form a sticky mix that holds together, but isn’t too wet. 3. Line an oven tray with baking paper and put desiccated coconut into a medium bowl. 4. Roll tablespoonfuls of cake mixture into balls, then roll in dedicated coconut to coat. 5. Place balls on the lined tray and refrigerate for at least 2 hours to ensure they’re firm. 6. Place in an airtight container and store in the fridge until required.
