20.01.2022 Had a nice visit to a Cafe in Bermagui this afternoon. @bonelesscafe is a vegetarian Cafe serving @redbrick.coffee, and plenty of it. Of the 3 blends they had on offer I enjoyed the Rogue the most. A balanced yet robust sweetness and smooth finish. I also finished off what was left of their batch brew, a single origin from Ethiopia (I believe) and another single origin as an espresso... and a soy flat on yet another blend to make sure I covered my bases. Awesome to have such a passionate cafe down in this neck of the woods. The food also looked bright and inviting. Probably a bit too much of a serve in each of the tacos they had on offer (my huge mouth couldn't fit around it), but they tasted great. Worth a visit if your in the area. #coffeehunt

13.01.2022 When ingredients stare at you, sometimes you need to do something about it. Today it was a massive head of cabbage. With beef mince in the fridge, I figured that rolled cabbage might be the go. So in a bowl I mixed the mince, 2 diced onions, a minced garlic clove, some parsley, paprika, basil, s&p, and my favourite spice for tomato based dishes, garum masala. Then in a seperate pot I boiled individual cabbage leaves in water for 2min,the dried and set aside to cool. Placing a... couple of spoonfuls of the beef mixture in half a leaf (without the thick bit) I rolled it like a burrito and set aside. Then in a fry pan I put down some oil, and squeezed all the little cabbage bundles in, let seal for 2min, then covered with a puree of canned tomatoes and beef stock. 45min later after it simmered away, the tomato pureed became a rich, complex, caramelised tomato sauce. The little bundles of cabbage were juicy, savoury and insanely delicious. About the only issue was that I boiled too many cabbage leaves so made them into a side dish flavoured with a quick brown sauce. All up, a bloody delicious dinner! #jobsdone

08.01.2022 I am slightly addicted to my left-over open sandwiches. They always seem to fit together better than they should. Today's is leftover beef stroganoff (slightly sour, rich, creamy, savoury beef) on sourdough toast, topped with another cheesey omelette, and a generous serving of fresh jalapeno based salsa. The slightly sour notes from the toast to the stroganoff, to the salsa, kind of tie it all in together... while the rich savoury creaminess of the stroganoff and the omelette fuse to give gentle respite from the sourness. Such a complex and delicious lunch, that probably should not have worked together, but did. #jobsdone



04.01.2022 Felt like a bit of an experiment tonight and so created my "wakiwakaranai" chicken drumsticks. Started with a yoghurt marinade (garlic, cumin, coriander, chilli, lemon juice) and shoved it in the fridge for a few hours. Then, crumbed it in a mix of panko (bread crumbs) salt, and pepper, and then drizzled in melted butter.This I threw into a medium oven for 50-60min (turning halfway). While this was underway, I grated a head of cauliflower, and then sauted it in a mix of oil and butter with some salt and pepper for 5-8min, and finished with a splash of soy sauce. First time making "cauliflower rice" and it turned out like the most delicious couscous. That all paired with a quick green salad and dinner was served. Not too shabby #jobsdone
