23.01.2022 What are your goals for the roastery? @twobeforeten: "The growth and production of coffee uses vast tracts of land that could otherwise be used to grow food. If we choose to be involved in the coffee industry, when 1 in 7 people on our planet go hungry, we need to make sure our involvement provides significant benefits to... every community involved along the way. This idea drives every aspect of our roastery from its sourcing ethos, to our production methods, and who we work with at a retail level. We will continue to expand as we find people who support our values but we aren’t planning global domination! 14.01.2022 Once the beans arrive, head roaster Jenna and her team tests everything one variable at a time to find a roast profile ideal for each bean’s part in their blends. They take samples of every batch to cup for quality assurance, and additional samples of any idiosyncratic roast curves. Cupping also extends to the final blend. "The Aranda Shops project has fundamentally changed the focus of Two Before Ten and clarified our purpose as a coffee roaster. The revitalisation of the derelict shops was incremental and relied heavily on support from the community and the gifting and re-use of whatever materials we could get our hands on. The community is what made the project possible and they are what continue to make it worthwh...ile. So, now we roast to build communities. As a roaster, we only work with people who share our values and support their community.
