Jairo’s coffees are always stunning and often really unique due to experimenting with fermentation. . Jairo Arcila anaerobic fermentation. . The anaerobic process takes 30 hours, once complete the coffee is dried on raised beds to achieve 20% moisture. The coffee then goes into grainpro bags for 80 hours and then finally back onto raised beds to dry to 10.5% moisture. . Jario Arcila Variedad . Cofinet is a company ran by the Arcila family in Armenia, Quindío, in the main coffee gr...owing axis in Colombia known as the EJE Cafetero. The company is headed by the brothers Carlos and Felipe Arcila, the 4th generation of the family to be coffee farmers and now exporters. Young and innovative, the Arcila brothers didn't have a straight path to coffee despite growing around farms and mills (their father worked for a big exporter called Racafé for 40 years!). Both of them have backgrounds in engineering and worked as such before falling in love with coffee in Australia. Business has been growing and distributing the finest Colombian coffee to local exporters. In 2015 they expanded their operations and began producing, sourcing and exporting speciality coffee to the rest of the world. As growers, they specialise in alternative processes that are new to Colombia. At their farm and processing centre La Pradera, the most exotic varieties are processed achieving profiles that are distinctive for Colombian coffees. 07.01.2022 ICE Fermentation process by Cofinet (2/3) . After 6 months of experimentation we realized the embryo of the coffee was severely affected when we brought down the temperature from 20 to -2 degrees celsius. We were fascinated by the incidence in the cup profile, although this process was affecting the embryo directly and leading to a shorter life shelf of the coffee. . After 1 year of trial and error experimentation we came up with an adapted ICE fermentation protocol that red...uces significantly the damage caused to the embryo during the ICE fermentation while conserving all the positive impact of the initial ICE fermentation process in the cup profile and increasing significantly the presence of floral notes. .
