18.01.2022 Its Slivovitz making time again. This year we collected over 600kg of plums. Many thanks to the people who allowed me to collect their unwanted fruit. Our Slivovitz is made in the traditional method and should be drunk traditionally to do it justice. #colacdistillery #lovemyjob #trynewthings... #microdistillery #handmade #otwayharvesttrail See more

15.01.2022 Aparently my account has been hacked. Passwords have been changed. Please ignore any posts or messages for the next few days. Apologies

15.01.2022 I have been at the Birregurra Festival and Art Show for the last few days. Some fantastic stalls on display and Richard Riordan MP - Member for Polwarth came along for a chat. It has been great seeing all the support for local producers.

11.01.2022 All our products are made 100% on site in Colac. We are getting close to being "grain to glass" on site. If you want to see our spirits being made, with an aapointment, we are more than happy for observers.

10.01.2022 Here is a new one; 10ml Colac Distillery Absinthe 20ml Midori melon liqueur 30ml Pineapple juice Splash of lemon, lime and bitters

10.01.2022 Our new oak fermenters are now ready (at last)to put into action. These will, hopefully, add to the final products. The only way to know is to taste and compare. We wish to expand our panel of tasters, to assess our new products before going into production. Normally this task falls to family and friends, unfortunately some palates are becoming a bit jaded and new palates are needed. Interested ? Go to www.colacdistillery.com.au and leave a message on the Contacts page and we... will send an info sheet. #colacdistillery #microdistillery #trysomethingnew #handmade #lovemyjob #otwayharvesttrail

09.01.2022 The recent quiet time has allowed us to try something different. We have been experimenting with essential oil distilling. 09.01.2022 Want to try something different? Try replacing vodka with Slivovitz in your favourite drink. Slivovitz is a traditional european distilled spirit made from plums and NOTHING else. It will add a new level of flavour when used in place of vodka. If youd like to try this, phone me or catch up at the Colac Distillery stand at the Birregurra Festival October 12 and 13.
