21.01.2022 The easiest Chicken and corn soup you will ever make and it tastes just like you ordered it from a Chinese shop. Left roast chicken with out the bones. I use the bones to make stock with. But today I had stock from the last chook or you can use chicken stock from the shop. Open a tin of creamed corn and add to chicken simmer about 15 mins add some cream just a little or heaps it’s up to you. A pinch of salt if needed. Enjoy. It freezes really well.

15.01.2022 Good old pumpkin soup. Some of the secrets to a good pumpkin soup are to start with a really ripe pumpkin. Cut it up and roast it so it starts to brown as that’s where the flavour is. In the pot again cook of some onion enough so it’s starting to colour. Add your pumpkin and some stock ( vegetables stock if you want a vegan soup or good chicken stock. ) salt and pepper. You can add carrots , celery, and garlic. If you don’t have any stock. Simmer for as 1/2 an hour or longer if you want it really thick. I put a bar mixer in the pot to smooth it out. Add cream now if you want but I only squirt cream on the top to decorate.
