13.01.2022 Wishing I had one of these in my backyard Missing that awesome papaya we had in Malaysia. These guys had a regular compost pile, no way a tree grows like this without lots of nutrients! A good reminder that we aren't inventing anything - just doing good old fashioned composting is enough
13.01.2022 Awesome composters @atlasdining always have such amazing looking food. And we are particularly stoked because shells have lots of fab nutrients for our compost! Hope you can get down there are try this! Raw Scallop from Albarhos Island, Smoked Cashew Milk and Betal Leaf. We marinate the scallop is a dressing of kaffir lime juice, scud chili and ground coriander seeds to give that pushy Thai Kick!

10.01.2022 We pulled out the last of our zucchini plant and Luigi said 'Don't forget to use the leaves!' We cooked zucchini leaf pasta (think minus the broccoli add the leaves instead) and greens pie with fetta and ricotta.

03.01.2022 Our compost is 100% good stuff. Not mixed with bark, dirt or anything else. The first time we bagged up our compost in coffee sacks we popped them neatly stacked and the worms ate through the sacks! @slfestivalaus
