18.01.2022 Todays harvest from the garden, about to hop into a salty fermenting bath for a few weeks. They smell like ripe tropical fruit but burn like baphomet's barbecue. Since summer, I've been working out the componentry of a fermented passionfruit hot sauce and am pleased to say it should be bottled in time for the next box. Given the delicious organic quality of all the ingredients (most of the chillies have come from @boonluckfarmorganics and they're insanely good), I've decided to keep it all raw and alive, so it will need to be stored in the fridge to slow further fermentation but I think it tastes incredible this way. #condimental #longlife

17.01.2022 Only the first 25 Autumn Boxes get to try these! It feels forever ago I was lost in conversation with James @greenanchorsydney about the future of food and the challenges he faces running a business based on rescuing waste from restaurants when I sat down and popped open this jar of pickles. Beneath a fragrant layer of oil and thyme leaves sat these discs of pickled broccoli stems. Not mega glam to look at, sure, but when it came to the crunch, oooh, the crunch was good. The...se were, in fact, some of the best pickles I'd ever tried. "What? Really? Broccoli?" you scoff - but it's true. I'm kind of embarrassed I didn't think of it first. Isn't this what we all want when we reach for the pickle jar in the fridge? Something you can bury inside a soft sandwich or through a salad to pop with a burst of acidity, the noise of tooth against vegetable resonating in the backs of our ears as saliva suddenly and generously bursts out of our tingling glands? I'll say it here and now I would trade all the squishy cucumbers in the world for these crunchy broccoli pickles. So, I phoned up James a few days later to tell him I want to go ahead with the broccoli pickles for the Autumn box. I drop the whole Condimental routine on him, hello, yessir, you've been chosen, I'll take ONE HUNDRED jars of your finest. He says great. There's only 25 jars left right now, but no worries we'll make another batch. Great! Ah. But then a few things changed and now the world has shut down. Hmm. Okay, let's run with what's on hand and when that runs out we'll move on to your other batches. Let's make the most out of what's already on hand because that's what makes the most sense at the moment. But we need to start taking time to consider how our love can be best placed in order to help the neighbours who have made food their entire life, who are motivated to learn, challenge and improve quality in their field for a sustainable future. Times are tough right now, and it's dangerously easy to stand in our kitchens alone, hopelessly staring into the abyss, munching on a $8 Woolies BBQ chook (believe me, I know.) If you seek out somebody local who is ...creating something you love perhaps its baked goods, pickles, cultured butters you CAN make a huge difference for both you and the producer by showing a bit of support. Even if you can't afford to become a regular customer right now, you'd be amazed at the power of a social media post or suggesting them to a friend as a gift idea. You could even just reach out and ask a question about what they do, because there are still so many ideas to spread, debates to be had and innovations to be sparked across future generations. We all love stories. It warms my heart every time somebody excitedly tells me about the day they met Holly Davis / Pecora Dairy / Pepe Saya at the markets, when their whole idea of pickles / cheese / butter got turned on its head forever. Because they met somebody authentic who spoke from a place of deep knowledge, who gave them a taste of something mind-blowing. When we sit with our friends and family to share food, we pass on these stories and maybe blow a few more minds. Perhaps it's about a little-known native ingredient, a farm out West motivated to do things a little differently, or a fermenter who shakes up everything we thought we knew about flavour. Why wait for chance? Make it your small adventure this week to locate somebody in your area who creates something you love. Or, if you're somebody who has always had a passion and and wants to get started with your own small business, reach out to those you admire and find out what it takes. Because I believe we need more good people to keep things small, shared and special. Thank you to @pepesaya for this initiative and to ALL the amazing producers and supporters who I have met so far.

07.01.2022 I just put a very small number of these up on the shop for the devoted! A few people got in touch and said "Hey, good pickled fennel, but we ate it all in one sitting on a cheese board", so I decided to take action and make sure you can have THREE cheese boards next time! Jumbo Pickled Fennel - triple the volume, triple the invigoration. Why is it so good? I think it's because I use Lirah white wine vinegar, and insanely good organic fennel from Block 11 Organics out in Orange NSW! It makes a huge difference to the overall flavour and vibrancy of the pickles. The vinegar is simmered with spices and freshly plucked lemon myrtle leaves and raw sugar. It's super aromatic. I am going to stop talking about it now.
