06.01.2022 Something yummy for the weekend Preheat oven to 160c 1 Chook Mix thoroughly 1/2 ts Lemon thyme fresh if possible or used fresh alternative herb ... coriander is fine Juice of half a lemon 1 dessert spoon Confiture de Citron# Cracked black pepper & salt 120g butter When mixed stuff the butter mixture under the skin of the chicken Put the chook and some whole bulbs of garlic and potato and kumara in the pan with the chook and into the oven for about 1-1.5 hours * Salad Into a separate bowl Chop into similar size pieces 1 red papaya, 1-2 mango, 1 red onion , 1 red capsicum 1 bunch chopped coriander Mix together and add juice of 2-3 limes ** # Confiture De Citron is fabulous and available to you press shop button or go to ConjurupFood.com.au * All ovens vary is how they cook so check your chook after 1houe ** I substitute with lemon if limes aren’t available or are too expensive

04.01.2022 Busy day still 10 minute dinner healthy and simple but simply delicious. Sirloin steak a potato and salad of avocado shallot cucumber mesclun mix with a bit of evo and balsamic vinegar

04.01.2022 Luscious and so delicious. I used a whole Burrawong Gaian duck broke it down and used ConjurupFood porchetta mix on the duck pieces overnight in the fridge then into oven in olive oil for 9 hours at a very low temp. I strained and reserved the oil and used it in another dish last night as well as the vinaigrette. The meat was so tender and full of flavour. You need patience and a couple of days but worth it
