25.01.2022 It has been a while for me without posting anything for you. This year will be probably remembered for centuries, so today I would like to give you 5 minutes of positive thoughts. Francesco from @avita_ciro produce this biodynamic wine, treating motherland in the most gently way possible. The Gaglioppo grape from the Fego vineyard near the sea is macerated for 12 hours. Then the only flower must spontaneously fermented and aged in steel for 9 months on lees. The result i...s a real sip of the sea, a sapid and fruity wine, elegant and at the same time structured, with extreme gastronomic versatility. We are in full swing of autumn, and today we have been kissed from a day of sunshine with 29* C and I couldn't resist the temptation of a glass of wine with my quick lunch. So with my panzanella salad La Serra Arneis from @castinowinery was the matching. Sometimes I think I'm very lucky to have turned my deepest passion in my job..... The Arneis is a vine of extremely ancient origins and rediscovered in the las...t decades, it grows in the southern part of Piedmont, in Roero to be precise, situated north of the Langhe, on the left bank of the River Tanaro. An elegant and delicate wine, rich in fragrances and with a wide range of ethereal notes of flowers and exotic fruit The taste is fresh with a good structure and moderate acidity. The variety Pallagrello Nero is an historical grape, appreciated by Ferdinand IV of Bourbon and considered one of the best of the Kingdom, as reported by an ancient writing found on a historical tablet dating back to 1775, in Caiatine hills fields. Pallagrello Nero is the sole and absolute prot...agonist of this soft and harmonious SilvaNigra produced by Cantine Rao. The intense purple-red colour and the currant and plum scents introduced by mineral notes give the wine majesty and class, making it worth tasting in meditation. Intense, but never too bold, the tannins give remarkable structure and elegance. Its superfine qualities make it the ideal company during red meat, truffle, mushroom, game and mature cheese meals. Today I would like to introduce you a great wine from Tuscany from Ottomani, a group of 4 friends and from here the name Eighthands....... A blend of Sangiovese & Canaiolo that spend few hours resting on their skins. Fermentation is spontaneous, conducted by the indigenous yeasts naturally present on the grapes; no selected yeasts are being used. Unfined. Unfiltered.... Low sulphite The colour is a great bright pink/orange salmon flesh. 14.01.2022 Hello there!! Here we are again with another very satisfying surprise from @castinowinery.... Pocorosso is obtained from a selection of Barbera and Dolcetto grapes, picked in advance in order to keep more freshness. The grapes are crushed and pressed and the must ferments in stainless steel tank, and after three months of ageing on the lees the wine is ready to be bottled. 05.01.2022 Sooooo.... folks tonight is the time for another natural wine. The COCCIOPESTO Trebbiano d'Abruzzo is a return to the future from @fattoria_nicodemi . A project born with the 2017 harvest, when they decided to vinify the Trebbiano in cocciopesto jars , made with a raw mixture of bricks, stone fragments, sand, binder and water, dried in the air for at least 30 days. Thanks to its microposity and consequent micro-oxygenation, cocciopesto enhances the organoleptic qualities ...and aroma of the wine without releasing any scent. The result is a fine and delicate wine with a decidedly mineral character. The grapes are de-stemmed, but not crushed and fermented with indigenous yeasts. Maceration lasts about 10 days during which manual punching down is carried out. After the racking, the wine returns to the cocciopesto where fermentation ends and continues its refinement until the moment of bottling which takes place without any filtration. Bright straw yellow. It offers a range of hints on delicate floral notes and aromatic herbs in elegant succession. On the palate its sapid and mineral vein is surprising. A wine that stands out for its expressive power drinking dynamics and great finesse. 03.01.2022 WOW what an unexpected surprise The other week in putting in order the stock in my warehouse I found a 6pack of Antolini Valpolicella Classico 2015 which was lost among the new vintages. What a nice surprise when I opened the bottle.... The wine reveals an unexpected complexity ... to the rich and fruity nose, with aromas of undergrowth, to the mouth with a constant line of shiitake mushrooms and ripe red fruit.
