21.01.2022 My first plated dessert around honey and Cara Cara orange. It is composed with a crunchy honey meringue trapping a vanilla frozen parfait and a fresh orange compote, a caramel honey (I called it "Caramiel" ) a mascarpone honey mousse, an orange cremeux, and two adorable chocolate bees!

16.01.2022 What your seeing here is American foulbrood (AFB). It is a fatal bacterial disease of honey bee brood. You can tell when a hive is infected by doing a match stick test as shown below. The brown stringy goo is a indication of this disease.
