15.01.2022 Winter warmer ! Consider having this delicious meal tomorrow night after a probablly very frosty start to the day. Will be -4 here in canberra overnight. Hope it's warmer wherever you are ! Basque Chicken (or slow cooked chicken in tomatoes, spices, chillies and capsicums with a touch of bacon) Your could follow this recipe to the letter and do on the stovetop after work, but since I am going to be busy I am going to throw it all together into the slow cooker tomorrow morning... and let the juicy goodness slowly cook all day. Thanks to not quite nigella website. Let me know how you go with this one !! Serves 4 / Preparation time: 20 minutes / Cooking time: 30 minutes plus 50 minutes unattended 4 tablespoons olive oil 2 red onions, sliced 8 garlic cloves, peeled 100g/3.5ozs prosciutto or bacon 1 yellow, 1 red and one green capsicum, seeded and sliced thinly 2 large green chillies, sliced into rings Piment d’espelette or cayenne pepper 2 sprigs thyme 2 bay leaves 3 tomatoes, peeled and chopped finely 200ml white wine 4 tablespoons red wine or balsamic vinegar 4 chicken marylands (leg and thigh) 2 teaspoons sugar salt and pepper to season 1. In a large cast iron pot, heat 2 of the tablespoons of oil on medium heat. Add the onion and cook until soft. Add the garlic and prosciutto and cook for a few minutes until garlic is softened. Add sliced capsicums, green chilli and piment d’espelette or cayenne pepper to taste (I found 3/4 teaspoon of the piment d’espelette quite hot). Cook for 5 minutes until capsicum is starting to soften. 2. Add the thyme, bay leaves, chopped tomatoes, wine and vinegar and simmer with the lid off for about 8-10 minutes. Season this with sugar, salt and pepper to taste and remove from the pan and place in a bowl. 3. Heat remaining 2 tablespoons of oil in the pan on medium to high heat. Brown the chicken marylands, two at a time skin side down until browned and then turn over. Once browned, turn heat down to low and place lid on and cook the chicken for 20 minutes. 4. Then top the chicken with the capsicum mixture and put lid back on and cook for 50 minutes until the chicken is very soft. Serve with rice or bread.

08.01.2022 DID you know ? How to freeze avocado and tomatoes. I've always known you can freeze tomatoes - it's the best trick yet. But I only found out you can freeze avacoados today. Here's how. Mash them and freeze them in an airtight container or plastic ziplock bag. Simple ! you can add a bit of lemon juice when you are mashing. Stops the avacado from darkening. Avacado mash will freeze for 4-5 months. When defrosted the taste isn't exactly as the fresh tastes, but still good for a ...facemask or in a spicy dip. Sliced avocado won't freeze sucessfully. And now about freezing tomatoes. Wash them well, then using a sharp knife lightly score the skin from stalk point down the side of the tomato to the underside. Do this 4 times so the skin is lightly scored roughly into quarters. Dry and freeze - I do mine in ziplock bags. Tomatoes now on hand to make any variety of tomato-based sauces for pasta or to throw into a casserole. And why do you score the skin? If you hold your frozen tomato under warm running water, the skin will peel off unbelievably easily !! Catch the top of the score with a sharp knife and gently peel off the skin.
