There’s something about sweet potatoes that makes you thi...nk of the holiday season, right? Give this recipe a try, it may become your go-to recipe every year! Happy Cooking! Sweet Potato Casserole 2 or 3 Sweet Potatoes 2 large eggs, lightly beaten 3 tablespoons unsalted butter, melted 2 tablespoons packed dark brown sugar 1 teaspoon kosher salt 1/2 teaspoon ground cinnamon 1/2 teaspoon ground ginger Pinch freshly grated nutmeg Freshly ground black pepper 1/4 cup coarsely chopped pecans Instructions: 1. Put about 1 of water in the 3qt saucepan, put on the burner at medium-low heat. 2. Process sweet potatoes on cone #3, place into perforated basket. When full, place basket onto 3 Qt. Sauce Pan. Turn heat to medium. 3. When Vapo-Valve begins to click steadily, turn heat to low and set timer for 15 minutes. 4. In a medium bowl, add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and pepper to taste. Whisk the mixture until smooth. 5. Check the consistency of the sweet potatoes with a fork, if they mash easily, add them into the bowl and pour the mixture over them, combine. 3. Pour the sweet potato mixture into a 9 skillet and sprinkle the top with the pecans. Cover & cook medium click low for 10 minutes. Serve immediately.
