25.01.2022 Sambal Stingray 400g to 500g stingrays 1 banana leaf... Ingredients A 120 shallots 6 fresh chillies 1 stalk of lemon grass 10g toasted belacan 2 teaspoon fish sauce 1 tablespoon calamasi juice 1/2 teaspoon salt -adjust to your own taste 1/2 tablespoon sugar - adjust to your own taste 1 tablespoon water 1) Add ingredients A, 20 seconds/sp10 2) scrap down with spatula, another 20 seconds/sp10, scrap down 3) Add 50g oil, 10mins/120degree/sp1 4) marinate the stingrays with the chilli paste for an hour 5) place the fish on banana leaf and grill until cooked. (I use airfryer, 200degree for 20 mins)

19.01.2022 Gua Bao with Pork Belly Char Siew. Marinated the Char Siew last night and cooked for 30 mins in TM. Gua Bao made from Mantou recipe, flatten it, brush some oil and fold it into half and steam for 10 mins.

19.01.2022 Sausage Bun - C & D favourites. Cost so much to buy from the bread shop! A 460g bread flour 50g cake flour... 5g bread improver (optional) 15g milk powder 50g castor sugar 8g salt 1 whole egg 5g Yeast 300g water B 40g unsalted butter cut in small cube 1. Add A into TM bowl 2. 30 sec/ sp 0 to 6 3. Knead 5 mins 4. Add B 5. Knead 2 mins 6. Rest in TM Bowl for 10 mins 7. Oil you hand 8. Divide dough to 15 portions, roll into ball 9. Shape your dough 10. Leave it to proof, approx 1 hour 11. Preheat oven 160 degree 12. Egg wash 13. Bake for 20 mins at 160 degree 14. Brush melted butter 15. 17.01.2022 Char Siew Chicken Rice with Sambal 4 heavenly king (4 different type of veggies) + . Marinated 4 big Chicken Marylands with Char Siew Sauce for at least 2 hours. Then cook in Thermomix for 20 mins/120degree/reverse spoon speed. Then pop in the airfryer for 4 mins at 180 degree.

15.01.2022 Hakka Yong Tofu, converted my late Grandmother recipe to Thermomix method. The difference between Hakka Yong Tofu and the 'normal' Yong Tofu is instead of only using fish paste as the filling. We use the mixture of fish paste, pork minced and salted fish. I have Tofu, Tofu Pok and Eggplant here. Will share tye recipe here within next few days. Please stay tuned.

14.01.2022 Curry Laksa made from scratch. 40 sec to blend the spice, 10 mins to cook the chilli paste. Then add coconut milk, seasoning, proteins of your choice and cook for 10 mins. Voila curry laksa is ready to be served.

Since we can't dine out at the Japanese Restaurant, we dine in at the comfort of our own home! #Chicken Katsu... Coat the chicken breast with plain flour, egg and Panko crumbs on both sides. Then deep fried until golden brown.
