22.01.2022 All about SALT! This article is about salt - its value to our health, its importance in adding and enhancing flavour to our food and most importantly which salts are the best to consume. As a result of a salt discussion in a Low Carb Healthy Fat seminar I attended last night, I promised to update the group on salt, so I checked, updated and revised the article I wrote in early 2019. It is very interesting and useful, so I am adding it again to my Facebook page for you to enjoy again! I always carry a tiny bottle of Murray River Sea Salt in my handbag, as frequently restaurants do not supply sea salt, only table salt which is very bad for our health!

22.01.2022 Cauliflower, Cumin, Chilli vegetable soup. Yesterday, I made my usual chicken stock using 5 chicken carcasses, 1 kg of chicken necks, 2 onions, 2 carrot, 1 leek, 2 celery, 2 bay leaves, 10 black peppercorns, 1 tbsp dried thyme, 10 parsley stalks, covered with plenty of water and slowly brought to the simmer and continued with a lazy bubble, what a call a 'blurp, blurp, blurp' for about 14 hours. I skimmed any foam from the surface until there was just this golden, crystal cl...ear liquid gold blurping away on top of the stove. This morning, I used this sensational stock to make this flavoursome cauliflower soup. It was supposed to be just cauliflower, onion, garlic, celery and blue cheese, but instead I added more vegetables, and some herbs and spices making it a 'Vegetable Soup.' I added some cream and seasoned it well with sea salt and cracked black pepper. Michael loved it so much, he asked me to save what I did....so I am adding it to my Recipe Collection here to make on another cold winter's day. I know it is popular to make soup at the end of the week with all your week-old vegetables from the bottom of the fridge. And, I do think that is a great idea instead of wasting them. However, it is really best and most nutritious to cook with your fresh, good quality vegetables, for the best results. Plus, of course to use a great stock. When I make my casual mussel dish at home I use lots of onion, bacon, garlic, tomatoes, white wine, lemon juice, sometimes celery, chilli, even mushrooms and chorizo. Last night I did not add the chorizo, mushrooms or celery. Michael always loves to add cream and so I did! Hence it is not officially any classic French dish that we make in cooking classesit is not a Moules à l’Armoricaine, moules à la Provençal or Moules à la Normande. Possibly a mixture! It is always delicious and as you can see from the photos, I ‘bastardise’ it even further with loads of sauce! We bought two James from one of Melbourne’s top restaurant suppliers after all his orders were cancelled in the first Melbourne lockdown in March. We ate 2-3 slices each day of the first jamon, as we worked here at home.. . Such a special treat it was!! 21.01.2022 I made this fish pie for my friend as a birthday present... it is difficult to shop here in Melbourne at the moment! Hers was a large fish pie, crammed with John Dory fish, prawns, scallops and mussels. This small one was for my dinner! Fish pie with mussels and prawns. This is a creamy, comforting pie with tons of flavour and goodness without the crust. I used John Dory, mussels and prawns. You can use any firm-fleshed white fish such as snapper, Ling, Mahi Mahi, or Blue G...renadier; the mussels and prawns may easily be excluded and you can add scallops if you wish. Use the creamy vegetable base and concoct your own flavour combinations. Do not be deterred by the long list of ingredients and instructions; this is a simple straight forward dish. There are a few elements in it that can be cooked at the same time. So do give it a try. You will love it! 17.01.2022 Try baking this easy roast one night this week. the preparation is quick and the results are delcious! Prunes and apples always team well with pork, so if you prefer, substitute apples for the prunes. For the pork, you can select various cuts such as female pork neck, pork scotch, a boned, rolled pork shoulder, or even a pork leg. These cuts are delicious as they are fatty and succulent; the fat runs through the meat rather than around it as it does in loins of pork. The sauce made with the prunes, onions, garlic, red wine, chicken stock and cream is also nice with pork chops or any other pork dishes you enjoy eating. All LCHF.

17.01.2022 Fish Dinner last week - sweet and tender flathead tails! I used coconut flour, egg wash and psyllium husks for the coating; could also use ground almonds or walnuts and do that next time. As well as the accompaniment of steamed asparagus, I made a timbale of the old Jewish favourite, cooked brown onions in lots of extra virgin olive oil, mixed with hard boiled eggs. 15.01.2022 Over the weekend I made this great soup and was really pleased with the result; it was very satisfying, so tasty, and not over-powering at all. Michael, who like many other people, does not like Brussels Sprouts, loved it even after I told him what it was. It was BRUSSELS SPROUTS and Stilton soup and it was very easy and quick to make! I did not take a photo of the result - wish I had as it was so good. By the way, it is pureed! Ingredients 2 tbs olive oil, plus extra to... drizzle 2 onions, chopped 2 garlic cloves, thinly sliced 2 celery stalks, chopped 3 thyme sprigs, leaves, plus extra as garnish 600g brussels sprouts halved 2L chicken stock Garnish 100g stilton cheese, crumbled 100g crème fraîche Thyme sprigs or chives Extra stilton cheese, crumbled Put the onions in a large, deep saucepan, with the olive oil and butter, place over medium heat, and cook stirring from time to time, after 5 minutes, add celery, garlic and thyme leaves, reduce heat to low and cook, stirring occasionally, for another 5 minutes until onion and celery are well softened. Add sprouts and stir to coat in the olive oil and butter in the pot. Add the stock, bring to the simmer and continue to simmer until the sprouts are softened for about 15 minutes or until the vegetables are tender. Season. Blend with a stick blender until smooth. Combine Stilton and crème fraîche in a bowl. Serve your soup topped with a swirl of Stilton mixture, a drizzle of olive oil, extra thyme sprigs, and some crumbled stilton in the centre. See more

10.01.2022 Here is the recipe for the Roasted Cauliflower with Tahini and Cashews video I added to our collection yesterday. Cauliflower can be quite bland, so it is perfect with added spices and flavours. You can give it in a Moroccan theme by adding a generous dash of ground cumin, as I have here, for a punchy chilli touch by adding some harissa or sweet chili with coriander, caraway and fennel. A drizzle of excellent extra virgin olive oil brings everything together. Mix and match your spices to your taste.

09.01.2022 Rack of lamb with roasted pickling onions and the best greens tossed as always in the wok with butter and extra virgin olive oil. I quick and delicious dinner. Buy lamb rack unfrenched with fat left on. Pour boiling water over pickling onions, to make it easy to remove their skins and roast them under rack. Roast rack for 40 minutes on 190 C. Rest. Cook your mixed greens while your rack of lamb is resting. 07.01.2022 I know it is a bit late to be adding this to my Facebook page! However, I simply had to share it with you for next year! One of the Cooking School clients has just written me the best email about how much she loved this Family Christmas cake of my Grandmother. I asked her to add my comments on the Facebook page and I then realised I had omitted to add it here on my Facebook page! You can prepare this Christmas Cake now, by marinating the fruits and in a few months time bake... it! once baked and cooled, pour over some extra brandy and store it for Christmas 2021! To store it, add the extra half cup or so of brandy or port; wait for it to absorb and be dry on the surface, wrap it in baking paper, then foil and finally cling form and store in airtight container. I often wrap it in brown paper as well and omit the cling wrap. There you are - all organised for Christmas 2021 or even a July winter Christmas 2021!! 06.01.2022 Today is being called Freedom Day! So hopefully, it is the start of new life, hope and good things to come. The Cooking on the Bay cooking classes will resume soon, plus new online classes are scheduled as well as a new program of ‘how to cook’ cooking classes! So, an exciting time in the kitchen and at the dining table are waiting for us. Watch this space! What a year 2020 has been it is hard to believe ‘the now’ after such a great start in January and February. A year ...of so many ups and downs; an emotional roller coaster. At times, I have found it hard to remain focused and now it is needed to focus even more as we go out into the ‘world’ and continue to live and work. One thing that has kept me going is the Low Carb Healthy Fat lifestyle I follow. Eating Low Carb and Healthy Fat food has kept me fit, healthy, well-nourished and boosted the immune system so it works to its full potential. 04.01.2022 This is something I cook regularly and used to take to my son's home every Monday night to eat with his family. Spatchcocking the chicken allows the chicken to cook more evenly and the meat is so moist,, you will never cook a chicken whole again!
