23.01.2022 This is an absolute favourite of mine . Good for a snack or add a salad and make it a meal . Salmon , sweet potato cakes ! 1 tsp oil... 2 medium sweet potatoes grated 1 onion diced 1 cup defrosted frozen spinach ( squeezed dry) 6 eggs Lemon rind 2/3 cup ricotta Salt and pepper Chopped dill 200g of flaked salmon or Canned salmon . Fry onion, sweet potato and spinach in a pan with oil. In a separate bowl mix eggs , ricotta, salt and pepper,dill. Mix in salmon and sweet potato mixture. Spray well with oil ,a muffin pan. 3/4 full each hole and bake at 180*c for about 15- 20 mins . 05.01.2022 Toss -Bake- -Serve Herbie Chicken with roasted tomato and broccolini Mix ... 2 Tbl parsley,rosemary, garlic all chopped finely With 2 tsp Dijon mustard 3 Tbl oil Coat chicken thighs in the herb mixture . Lay in a baking tray, sliced red onion and sliced lemon . Roast at 200*c for about 20 minutes . In a bowl toss broccolini and tomato with chilly finely cut , lemon juice salt and pepper and a drizzle of oil . Add it to the baking tray for a further 10 minutes . 01.01.2022 Greens Prawns are affordable at the moment so make the most of them and start the New year with this fresh warm Prawn Salad Prawn Salad with Mixed grains ... 100 g cooked brown rice 100g quinoa 100g pearl couscous 1 bunch Broccolini 1 tsp Garlic 3 Tbl olive oil 1 Tbl oil extra 1 tsp sumac Grated lemon rind 2 Tbl Lemon juice Salt and pepper Salad mixed leaves with julienne carrot Coriander leaves Green Prawns peeled -as many as you like 1. Cook grains or buy the precooked version and microwave. 2. Microwave broccolini for 30 seconds . 3. Heat 1 Tbl oil in a pan and add garlic , broccolini then prawns . Toss until prawns are cooked ( orange ). 4. In a jar prepare dressing - add 3 Tbl olive oil , lemon zest and juice , sumac spice ,salt and pepper. 5. Place salad on a plate top with mixed grains followed by the prawns . Drizzle over dressing! Serves 4 Let me know what you think ! It’s so easy to eat fresh !
