24.01.2022 Supporting a new venture, Aurora on Light Square. Fairfish of the day was whole Australian Herring wrapped in prosciutto. Photo was taken after the first 2 fish were grabbed off the plate by two eager diners. But you can get the gist. Be going back soon.

21.01.2022 Glen started out fishing life as a flounder fisherman and laments the time when they were caught by the boxfuls. When he manages to get a few here and there the smile on his face is priceless. Flounder fishing requires nets be left to soak and then cleared at least twice a day, sometimes 3 times in hot weather. Seals constantly raiding the nets means that this cannot be done any more. So even when there are good breeding events in the North Lagoon it is too hard to fish fo...r exclusively. So we occasionally get a few when fishing mulloway nets, especially during summer when the seal numbers are lower. Conditions in the Coorong deteriorated over the years, in particular the South Lagoon and it only produces a fraction of the flounder it used to. Tonnes of fish were harvested from the South Lagoon when conditions were right. Mulloway, black bream flounder, mullet all used to be prolific down there and that is just the commercial species. To those add in the birds, and other critters of the food chain. If action was taken to improve the health of the Coorong the productivity of this region could be exponentially increased creating jobs in the commercial industry, recreational fishing and tourism. 19.01.2022 A bit of vacuum packing in our new compostable bags. The down side is that they cost 4 times more than normal bags. Do customers really care? Are they prepared to pay a little bit more? The proof will be if they buy them.

15.01.2022 Another great creation by our favourite charcuterie. About to send some more carp over to The Fish Shoppe in Melbourne to process for the next fish terrine and sausages.

14.01.2022 All set to go at Chez Coorong Fisherman tonite. Catering for a visiting Rotary Club. Chef Tracy, fry cook Glen and waitress Roxy are providing a three course meal of Carp cakes and salt and pepper strips, Parmesan and panco crumbed Coorong Mullet with tossed salad and potato bake and dessert of apple Danish or fruit salad and ice cream. Roxy is trained in silver service but it is bamboo service all the way tonite using compostable cutlery and plates. Entertained the diners with anecdotes and answered some burning questions.

14.01.2022 Inspired by a cooking show today and a couple of spare black bream not good enough for sale, our dinner tonite is black bream fillets wrapped in Skara Smallgoods Pancetta, used a substitute for hammon Even at a few days old the bream is delicious. The Pancetta is salty goodness.

14.01.2022 Hope everyone had a great Xmas and New Year break. We have been staying out at our shack on the Coorong but have still been fishing since after boxing day. Mainly mullet fishing trying to keep the local butcher supplied but catches have been patchy. Got enough spares for a couple of deliveries on Friday to McLaren Vale and Milang. Glen also smoked some mullet yesterday which had sold out over the holiday period. Today after doing some processing, we dropped special deliveri...es to a couple of our restaurant clients in Adelaide. On the way back out to the shack we had a request for some of our smoked mullet to be dropped to some visitors at Coorong Cabins. Just wish this wind would bugger off so we can get stuck into it. Can't set with the seals around, have to sit out on the water to pick them straight out, which is too dangerous with 20 knot plus wind. See more

We are listed as a seafood business, we advertise fresh and frozen seafood and pictures are not graphic.... so what's the deal? This platform has some pretty rank posts showing all sorts of stuff that is in bad taste. Selective or what?

08.01.2022 If you look at the graph the biggest impact on commercial mulloway catches was the building of the barrages. River flows also influence abundance. The Coorong is only one of a number of areas juvenile mulloway frequent during their life cycle. Recent scientific reports confirm this. The public can be assured that the small number of mulloway fishers in the Coorong are having minimal impact on the overall population. We look forward to supplying the public of South Australia and interstate with delicious, healthy Australian Seafood. Its "easy as" I have removed the post about the rubbish put forward about mulloway stocks by the SA Fishing Alliance. They have no credibility and not worth our valuable time.

04.01.2022 Spotted this (with an appearance by us)on TV this morning. Needs some updated information. We are getting closer to a harvest strategy. However Covid-19 virus is holding up access to markets. The carp virus is not an eradication option, only offers suppression until they build a resistance. If they continued with the daughterless carp technology we may have a different scenario. They should have run the two programmes consecutively to cover all bases.
