04.01.2022 After much ado, a whole lot of tooling around, and 14 days in the hole, its all about to happen: the first (and possibly) only "Eschaton Art Series" Red, a 2018 Heathcote Shiraz. As with the Art, Subject, (Jamie Sach) and Wine, (Alex Katsaros), and most of my wives and 3 of my kids, I've been fastidious and this is an exciting release on the back of the Mazi "Art Series" Magnum, and the upcoming Mazi "Art Series" Dozen. As we all privately acknowledge, drinking at 8.30am is b...ecoming "de rigueur", drink driving is impossible since we no longer drive anywhere and as the days shorten and the evenings cool, we are in desperate need of that early morning glass of fireside shiraz.... The Wine Vintage: 2018 Variety: 100% Shiraz Region Heathcote VIC Winemaking: Handpicked fruit, 100% whole bunch fermented with extended maceration before pressing. Secondary malolactic fermentation completed in 500 litre new French Oak puncheons and matured on lees. The wine was racked clean from barrel prior to course filtration and bottled under screw-cap. Minimal SO2 used immediately prior to bottling. Tech Specs: Alc: 14.5% pH: 3.58 TA: 6.70g/L Glucose/Fructose: 0.9g/L The Art One of the world's truly great blokes, and king of the long lunch, (now a tee-totaling bush-walker....), Jamie Sach. This came to me on a whim after my 2018 Apokalypsis exhibition, and has only taken 2 years to finish, but hey: whatever; no-one's in a rush are we? There's 70 dozen of these up for dibs.
