20.01.2022 Fruit Scrap Vinegar! USE IT ALL. Make your own vinegar using apple and pear cores and skins. Add scraps to a large jar or crock and cover with water. For each cup of water add 1 tablespoon sugar and 1 tablespoon raw vinegar. Cover with muslin or a clean chux and secure with a rubber band or piece of string. Let sit for a few weeks until its a little bubbly and smells and tastes like cider. Strain and discard scraps. Pour the liquid back in the jar and cover again. Let sit until it turns into vinegar ( it will taste acidic, tart and fruity). Then pour into a bottle, seal and store in the fridge or pantry for a really long time. Great for summer dressings! #useitallcooking

We can all avoid the cheap, mass-produced and disposable stuff that contributes to landfill and instead seek out items and gifts from small businesses, talented artisans and local makers. Supporting them keeps communities strong and stops our planet being clogged up with more stuff.

19.01.2022 Remember the 200 kg of cherries we rescued from landfill last month? Well now the circle is complete! We donated some of the cherry hot sauce and a whole lot of pickles back to @foodbanknswact to distribute before Christmas. Leanne from Karabi Community & Development Service was thrilled to see our products in the warehouse and told us. We look after people from so many backgrounds and we are always looking to Foodbank for something different for them. We just can’t ...get products like this anywhere else. Our clients don’t have the money for food like this and we couldn’t afford it without Foodbank and Cornersmith. We're really excited that we teamed up with @foodbanknswact and look forward to more collaborations like this next year to reduce food waste, donate more food to those in need, and make our food system better and fairer for all. Weve added more of our tasty odd and ends to it - jalapeo tops, the ends of lemongrass, knobs of ginger and traded kaffir lime leaves . Weve just tasted it - its insanely delicious! It will be brewing a little while longer, but soon well use it as a Tabasco-style sauce for the cafe. 17.01.2022 WASTE HACK WEDNESDAY: This week we're celebrating citrus season and all the things you can do with it. One of our favourite waste hacks is oven drying the peels. So often we juice oranges and lemons and then throw away all the flavour and oils that are the skins. Dried peels can be used to flavour slow cooked stews, added to soups, cocktails and herbal teas. You can also blitz the dried peels in a spice grinder to make citrus powders which can be used in baking, whipped through butter or avocado or used to make a seasoning salt. Store dried peels in an airtight jar for up to 12 months! Does anyone have any other citrus peel tips?? #wastehackwednesdays

11.01.2022 This week we're obsessed with pineapples and the picklers have been busy bottling some new products for our summer range. We bring you a zingy Pineapple Mustard Relish and a waste-warrior Pineapple and Chilli Cocktail Syrup made from excess pineapple skins. Plus we have Pineapple, Mango and Kefir Cordial from @katieswiftcordials and a delicious Pineapple and Mint Shrub from @pyewacketstraditional. It won't hit the cafe shelves until Christmas but we have limited stock available online now. We've also put a fermented pineapple skin soda recipe up on the website for you to try at home!

11.01.2022 Waste Hack Wednesday: SPENT COFFEE GROUNDS We're always looking for local businesses to work with to reduce food waste and share resources. Our beeswax wrap supplier Kirsty from @parva.little.things also makes natural skin care products and is often found filling up a bucket of our spent coffee grounds at the end of the day. She uses them in her scrubs and body oils and has generously shared a simple recipe so you can try it home! Simple Coffee Body Scrub Step one is the... most important, dry the wet coffee grounds on a tray or a plate until they resemble coffee again (a few days at most) run a fork thru them to aerate daily. Once dried they are ready to use. Take an empty, clean Cornersmith pickle jar (the relish jars are the perfect size). Add 1/2 cup Coffee grounds, 1/2 cup of brown or white sugar, 1-2 tsp of your favourite ground spice (cinnamon, ginger, cardamon, five spice). Then add 1/4 cup of oil (almost any you have in the kitchen will do, but avoid coconut, it clogs drains and hardens in cold temperatures) put the lid on and shake really well. You want a wet sand consistency, too dry? a splash more oil. Too runny? more coffee! Use once a week, scrub in gentle circular motions. Best kept out of the shower in case water gets in the jar. Our waste hacks are a way to share creative ideas for sustainable communities. Don't forget, one persons rubbish, is another persons gold!

09.01.2022 Waste Hack Wednesday: SPENT COFFEE GROUNDS Were always looking for local businesses to work with to reduce food waste and share resources. Our beeswax wrap supplier Kirsty from @parva.little.things also makes natural skin care products and is often found filling up a bucket of our spent coffee grounds at the end of the day. She uses them in her scrubs and body oils and has generously shared a simple recipe so you can try it home! Simple Coffee Body Scrub Step one is the... most important, dry the wet coffee grounds on a tray or a plate until they resemble coffee again (a few days at most) run a fork thru them to aerate daily. Once dried they are ready to use. Take an empty, clean Cornersmith pickle jar (the relish jars are the perfect size). Add 1/2 cup Coffee grounds, 1/2 cup of brown or white sugar, 1-2 tsp of your favourite ground spice (cinnamon, ginger, cardamon, five spice). Then add 1/4 cup of oil (almost any you have in the kitchen will do, but avoid coconut, it clogs drains and hardens in cold temperatures) put the lid on and shake really well. You want a wet sand consistency, too dry? a splash more oil. Too runny? more coffee! Use once a week, scrub in gentle circular motions. Best kept out of the shower in case water gets in the jar. Our waste hacks are a way to share creative ideas for sustainable communities. Dont forget, one persons rubbish, is another persons gold!

06.01.2022 Last week we rescued 200kg of cherries from ending up in landfill (thank you @foodbanknswact) . Today we're making a giant vat of Cherry Hot Sauce. The colour and smell is unbelievable! We'll be bottling and labelling it later this week, so you'll find it on the shelves and the online store this weekend.

06.01.2022 Waste Hack Wednesday: Mandarin skins! Mandarins are so good right now, but what to do with all those flavoursome orange skins. Last week we made a big batch of mandarin & star anise jam, so this week were making @fermentingprojects Home Made Bitters, with mandarin skins, quassia bark, peppercorns, coriander seeds and a few little secrets. Use in replacement of tonic water, its insanely delicious with gin or vodka, or add a tablespoon to sparkling water for a grown up booze-free drink. 05.01.2022 Since opening our doors, Cornersmith has only used Australian products, drawing special attention to small scale producers, growers and makers we admire. We do this for flavour, to reduce food miles, support local businesses and to raise awareness of the amazing food that is produced in Australia. This week we are getting behind the excellent initiative Aussie Artisan Week! 05.01.2022 OVER AND OUT FOR 2020! We wanted to say a big thank you to our customers and community for supporting us through one of the most difficult years we've had. We were so afraid we would lose our beautiful business this year and would not have made it through without you. To everyone who bought a jar of pickles, our new cookbook or coffee and a toastie, please know it made a difference and will allow Cornersmith to keep on truckin' in 2021. We're going to take a little break to ...lie down and recharge and we'll be back in the new year ready for whatever 2021 throws at us. The cafe will re-open on January 6th and the Picklery will re-open on the 18th. The online store is open, but we will not be posting any orders until we're back on the 18th. 01.01.2022 Cherry rescue alert! Last week we rescued 200kg of delicious Aussie grown cherries from landfill. Our friends @foodbanknswact knew we'd be up for the challenge of preserving them before it was too late. We dropped everything and spent our days making Chilli Cherry Hot Sauce, Cherry Bitters and a Christmas Cherry Glaze and not a single cherry was wasted. We'll be donating some of these back to @foodbanknswact and you'll find the rest on the shelves for Christmas gifts.
