24.01.2022 The evidence keeps piling up - nuts are very good for you!

24.01.2022 This is what we have had to face this year with cockatoos destroying our walnut crop. Despite our best efforts with a gas cannon and drone, they ate all our crop, so unfortunately we have no walnuts to sell in 2020.

22.01.2022 The yellow grass says its been a dry summer, but the trees are looking good thanks to our groundwater. The photo is from our drone, the latest addition to our cockatoo deterrence armory.

22.01.2022 Its harvest time and the nuts are just hanging on by a thread. Any wind and they will be on the ground. The next few weeks promise to be busy!

21.01.2022 These cockatoos are just so clever! It shows what we are up against in trying to protect our walnut crop. This year, it got to the point that when our gas cannon went off, they just looked up for a few seconds then went back to stripping the trees, not just nuts but also leaves so that they wouldnt miss any.

18.01.2022 The oaks are turning yellow as winter fast approaches. Riley has found his first truffle for the year (immature), but it looks promising for what we first thought might be a poor year because of the lack of rain. Fingers crossed that we were wrong.

14.01.2022 We have some truffle pieces from two immature truffles we harvested earlier in the week. They now have a good aroma ready for use. Selling at $1.10 per gram. message for more details.

14.01.2022 Many of our growers are now picking green walnuts: immature walnuts that are harvested before the shell hardens. The flesh within a green walnut is undeveloped ...- a gelatinous and sticky substance that is highly fragrant and aromatic. Green walnuts have a rather astringent or bitter flavour with mild spice-like notes. There are simple ways to remove their bitter tannins and transform them into something delicious such as; - Italian Nocino or Nocello liqueur or French Vin de Noix nectar - Pickled walnuts in spiced vinegar, for serving with cheeses and meats, typically in a ploughmans lunch - Glyko Karydaki, a traditional Greek spoon sweet made with young green walnuts, sugar, lemons and spices. 11.01.2022 How wonderful to be able to go on a fungal foray. Every year I long to go into the Otways about now, but we are usually too busy with walnut harvest. This year it is COVID-19 that is stopping me, but its looking like a good year for truffles if the number of mushrooms in our truffiere is any guide. Not long to go now.
